Crispy Chicken Avocado Poke Bowl
Why this recipe works
- Strong texture contrast: Crisp panko chicken, soft seasoned rice, creamy avocado and crunchy cucumber make each bowl feel varied rather than heavy.
- Savoury depth: Soy sauce, sesame oil, sesame seeds and nori bring a clear umami backbone without needing a complicated dressing.
- Easy to adapt: The rice, chicken and vegetable base can be adjusted with different toppings, extra greens or a sharper dressing depending on preference.

Texture tips
- Keep the coating crisp: Press the panko firmly onto the chicken, then fry over steady medium-high heat so the crumbs brown before the meat dries out.
- Assemble just before serving: Add the dressing at the end rather than soaking the rice and toppings in advance.
- Rest before slicing: Let the chicken sit briefly after frying so the juices settle before it is cut for the bowl.
Ingredient notes
- Use firm-ripe avocado: Choose avocado that yields slightly but still holds its shape, so the slices stay neat in the bowl.
- Season the rice while warm: Fold the vinegar through the rice while it is warm, not hot, so it absorbs the seasoning without becoming sticky or crushed.
- Cut nori at the last minute: Slice or snip the nori shortly before serving to keep it light and crisp.
Make-ahead tips
- Keep the parts separate: Store rice, chicken and vegetables in separate containers so the chicken coating and fresh toppings keep their texture.
- Prepare the vegetables early: Cook the edamame and slice the spring onions ahead, but leave the avocado until serving to prevent browning.
- Reheat before assembling: Warm the rice and chicken separately until piping hot, then add the cold cucumber, avocado, spring onion and nori.
Ingredient swaps
- Use chicken breast cutlets: Chicken breast works well as a leaner option; reduce the frying time slightly so it stays tender.
- Swap the vinegar: White wine vinegar can replace rice vinegar for a sharper, less sweet rice seasoning.
- Use toasted sesame seeds: Roasted sesame seeds give the dressing and final bowl a deeper, nuttier finish.

Ingredients
Instructions
- Rinse the sushi rice in cold water until the water runs mostly clear. Tip into a saucepan with 360 ml water and a pinch of the fine sea salt, bring to the boil, then cover and cook on the lowest heat for 12 minutes. Take off the heat and leave, covered, for 10 minutes.
- Fluff the rice, then drizzle over the rice vinegar and fold through gently. Spread the rice over a tray or large plate to cool slightly while you prepare the toppings. It should be warm, not hot, when you build the bowls.
- Put the edamame into a small pan of boiling water and cook for 3–4 minutes until tender, then drain well. Slice the cucumber into thin half-moons, slice the spring onions, and slice the avocado just before serving. Snip or slice the nori sheets into thin strips.
- In a bowl, beat the egg with a pinch of fine sea salt. Coat the chicken thighs in the egg, then press into the panko breadcrumbs until well covered. Set aside on a plate while you heat the oil.
- Heat the vegetable oil in a frying pan over medium-high heat. Fry the chicken for 4–6 minutes per side, until deep golden and cooked through with no pink in the thickest part. Rest for 2 minutes, then slice.
- Whisk the soy sauce with the sesame oil and sesame seeds. Divide the rice between two bowls, then top with cucumber, edamame, avocado and sliced chicken. Spoon over the dressing and finish with spring onion and nori strips.
Recipe notes
Tips
- For the best texture, cool the rice on a wide plate so it steams off quickly without going dry.
- Keep the oil at a steady medium-high heat so the panko browns before the chicken overcooks; if it colours too fast, lower the heat slightly.
- Food safety: make sure the chicken is cooked all the way through, especially for children, older adults, and anyone who is pregnant or immunocompromised.
Substitutions
- Replace Chicken thighs with Chicken breast cutlets for a leaner topping; reduce frying time slightly so they stay juicy.
- Replace Rice vinegar with White wine vinegar for a sharper, less sweet rice seasoning.
- Replace Sesame seeds with Roasted sesame seeds for a toastier finish.
Storage
- Refrigerate up to 2 days
- Store rice, chicken and toppings in separate airtight containers in the fridge. Reheat the rice and chicken separately until piping hot, then assemble with the cold cucumber, avocado, spring onion and nori just before serving.
