Vegan Avocado Edamame Poke Bowl

A poke-style bowl takes the easy, composed format of rice, savoury dressing and fresh toppings and turns it into a quick, flexible lunch. In this vegan version, sushi rice provides a gently sticky base, while edamame adds substance, cucumber brings crispness and firm-ripe avocado gives creamy richness. The soy sauce, rice vinegar and sesame oil dressing keeps the bowl bright but savoury, with lime, spring onion, toasted sesame and optional nori adding freshness, aroma and a lightly nutty finish. It is best assembled just before eating so the textures stay distinct.

Why this recipe works

  • Fast assembly: Most of the work is simple slicing and boiling, so the bowl comes together quickly once the rice and edamame are cooked.
  • Clean, balanced dressing: Rice vinegar and lime lift the soy and sesame oil, keeping the avocado from feeling heavy.
  • Fresh texture contrast: Creamy avocado, firm edamame, crisp cucumber and soft sushi rice create a satisfying mix of textures.

Ingredient notes

  • Choose firm-ripe avocado: Use avocado that yields slightly but still slices cleanly, so it stays creamy without collapsing into the rice.
  • Use lime to keep it bright: A squeeze of lime over the avocado helps preserve its colour and sharpens the overall flavour.
  • Nori adds depth: Optional torn nori brings a savoury seaweed note that makes the bowl feel more poke-inspired.

Make-ahead tips

  • Prepare the rice and edamame early: Cook and cool the rice and edamame in advance, then keep them chilled until you are ready to assemble.
  • Slice avocado last: For packed lunches, keep the avocado whole and cut it just before serving, then add lime.
  • Best eaten fresh: The bowl is at its best the day it is made, while the cucumber is crisp and the avocado is freshly sliced.

Serving ideas

  • Finish with sesame and nori: Roasted sesame seeds and torn nori add aroma, crunch and a more savoury finish.
  • Serve with something light: A small bowl of miso soup or quick pickled vegetables works well alongside the fresh rice bowl.

  1. Rinse the sushi rice in cold water until the water runs mostly clear. Cook according to packet instructions until tender, then spread in a mixing bowl and leave to cool for 10 minutes. Meanwhile, boil the edamame for 3 minutes, drain, and rinse under cold water to cool.
  2. Whisk the soy sauce, rice vinegar and sesame oil together. Halve the cucumber lengthways and slice, then thinly slice the spring onion. Halve the avocado, remove the stone, slice the flesh, and squeeze over a little lime to keep it bright.
  3. Divide the rice between two bowls and spoon over the dressing. Arrange the edamame, cucumber and avocado on top, then finish with spring onion and roasted sesame seeds. Tear over the nori sheets if using, and squeeze over the remaining lime to serve.

Recipe notes

Tips

  • Cool the rice until just warm before assembling so the avocado stays creamy and the cucumber stays crisp.
  • Dress the rice rather than the whole bowl for a clean, poke-style finish and better balance in each bite.
  • If you pack this for lunch, keep the avocado whole and slice it just before eating, then squeeze over the lime.

Substitutions

  • Replace rice vinegar with white wine vinegar for a slightly sharper dressing.
  • Replace nori sheets with roasted sesame seeds for extra crunch, increasing the roasted sesame seeds by 1 tsp.

Storage

  • Refrigerate up to 1 days
  • Best eaten the day it is made. If storing, keep the avocado separate and add just before serving; chilled rice can be loosened with a splash of water and brought back to room temperature.
