Mexican Cauliflower Mole Bowl with Rice and Black Beans
Why this recipe works
- Layered mole-style flavour: Ancho chilli, cumin, cinnamon, cocoa and tomato create depth, while almond paste gives the sauce body and a nutty finish.
- Good texture contrast: Roasted cauliflower and creamy beans sit against fluffy rice and crisp red cabbage, keeping the bowl hearty without feeling heavy.
- Freshness at the finish: Lime and coriander brighten the rich sauce and help balance its earthy, spiced character.

Adjust the heat
- For a milder bowl: Use mild chilli powder instead of ancho chilli powder, or reduce the amount slightly if serving people who prefer less heat.
- For more warmth: Add extra ancho chilli powder or finish with sliced fresh chilli, keeping the sauce balanced with lime at the end.
- Keep the heat rounded: If the sauce tastes too sharp or smoky, let it simmer gently a little longer and adjust with lime only just before serving.
Ingredient notes
- Almond paste adds body: The almond paste helps thicken the sauce and gives it a rounded nuttiness; finely ground almonds work too, though the texture will be slightly coarser.
- Ancho brings smoky depth: Ancho chilli powder is more fruity and smoky than aggressively hot, which suits the cocoa and tomato in the mole-style sauce.
- Finish with lime: Add lime at the table rather than early in the sauce so the final flavour stays bright and fresh.
Make-ahead tips
- Store the fresh toppings separately: Keep the cabbage, lime and coriander apart from the hot components so they stay crisp and fresh when serving later.
- Reheat gently: Warm the cauliflower, beans and sauce over low heat with a splash of water if needed, then reheat the rice separately and assemble just before eating.
- Good for meal prep: The sauced cauliflower and beans keep well in the fridge and can also be frozen, making the bowl easy to portion ahead.
Common mistakes
- Do not let the sauce catch: Once the cocoa and almond paste are in the pan, keep the heat gentle and whisk regularly so the sauce stays smooth rather than scorched.
- Avoid a paste-like sauce: If the mole-style sauce thickens too much, loosen it gradually with a splash of hot water until it coats the cauliflower easily.
- Add the cabbage at the end: Use the red cabbage as a fresh topping rather than mixing it into the hot sauce, so it keeps its crunch.

Instructions
- Heat the oven to 220°C (430°F). Rinse the basmati rice until the water runs mostly clear, then put it in a saucepan with the water and half the fine sea salt. Bring to the boil, cover, reduce to low and cook for 10 minutes, then take off the heat and leave covered for 10 minutes.
- Cut the cauliflower into bite-sized florets and thinly slice the stem. Toss with 1 tbsp olive oil, half the black pepper and a pinch of the remaining salt, then spread on a baking tray. Roast for 18 to 22 minutes, turning once, until browned and tender.
- Finely grate the garlic. In a saucepan over medium heat, warm the remaining 1 tbsp olive oil, then cook the garlic for 30 seconds until fragrant. Whisk in the ancho chili powder, ground cumin, ground cinnamon and cocoa powder for 20 seconds, then whisk in the tomato passata.
- Crumble in the almond paste and whisk until it melts into the sauce, then simmer gently for 6 to 8 minutes until glossy and slightly thickened. Taste and season with the remaining fine sea salt and black pepper. Keep the heat low so the sauce does not catch.
- Drain and rinse the canned black beans, then add them to the mole-style sauce for 2 to 3 minutes to warm through. Add the roasted cauliflower and fold to coat, cooking for 1 minute more. If the sauce feels too thick, loosen with a splash of water from the kettle, a tablespoon at a time.
- Finely shred the red cabbage and roughly chop the fresh coriander. Cut the lime into wedges. Fluff the rice, then divide between two bowls and top with the cauliflower and beans, the cabbage slaw, a squeeze of lime and a scatter of coriander.
Recipe notes
Tips
- For a smoother, more traditional mole-style texture, whisk the almond paste into the warm passata off the heat first, then return to a gentle simmer.
- If serving to anyone who is pregnant, elderly, or immunocompromised, ensure the dish is served piping hot throughout.
Substitutions
- Replace Almond paste with Almonds (finely ground) for a slightly coarser, nuttier sauce.
- Replace Ancho chili powder with Mild chili powder for a similar warmth with less smokiness.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in sealed containers. Reheat the cauliflower, beans and sauce in a saucepan over low heat with a splash of water until piping hot; reheat the rice separately, then assemble with fresh red cabbage, lime and coriander.
