Pastitsio (Greek Baked Pasta with Minced Beef and Béchamel)
Why this recipe works
- Layered savoury flavour: The beef sauce is simmered with tomato, onion, garlic and a little cinnamon, giving the filling depth without making it heavy.
- Creamy, sliceable topping: A thick béchamel sets in the oven, creating the recognisable golden top layer while keeping the bake rich and structured.
- Good for planning ahead: Pastitsio rests well, reheats neatly in portions and freezes reliably, making it practical for family dinners or batch cooking.

Timing notes
- Allow time for the layers: Most of the hands-on work is in preparing the meat sauce, pasta and béchamel before the bake goes into the oven.
- Rest before slicing: Let the pastitsio stand for 15 minutes after baking so the béchamel and pasta layers firm up for cleaner portions.
Ingredient notes
- Choose a sturdy pasta: Penne works well, while rigatoni gives a more traditional tubular shape and catches the sauce effectively.
- Use the spice gently: Cinnamon in the meat sauce and nutmeg in the béchamel are distinctive in pastitsio, but they should support the savoury flavours rather than dominate.
Common mistakes
- Leaving the meat sauce too loose: Simmer the sauce until thick and rich; excess liquid can make the pasta layer soft and prevent neat slices.
- Rushing the béchamel: Whisk the milk in gradually so the sauce stays smooth and thickens evenly.
- Cooking the pasta too far: Boil the pasta just until al dente, as it will continue to soften while baking.
Make-ahead tips
- Cook ahead and portion: Bake the pastitsio, cool it completely, then refrigerate covered for easy portions over the next few days.
- Freeze in servings: Well-wrapped portions freeze well and can be defrosted overnight in the fridge before reheating.
- Reheat gently: Warm portions in a 180°C (355°F) oven until piping hot, covering loosely if the top browns too quickly.

Instructions
- Heat the oven to 190°C (375°F). Finely chop the onion and crush the garlic.
- Heat the olive oil in a large frying pan over medium heat. Add the onion with a pinch of the salt and cook for 8 to 10 minutes until soft and lightly golden, then stir in the garlic for 1 minute.
- Add the minced beef and cook over medium-high heat for 6 to 8 minutes, breaking it up, until browned and any liquid has evaporated. Season with the remaining salt, black pepper and cinnamon.
- Stir in the tomato passata and bring to a gentle simmer. Cook for 20 to 25 minutes until thick and rich, then take off the heat.
- Meanwhile, bring a large pot of well-salted water to the boil and cook the penne until just al dente. Drain well and tip into a baking dish, spreading into an even layer.
- Spoon the meat sauce evenly over the pasta and gently level the top. Set aside while you make the béchamel.
- In a saucepan over medium heat, melt the butter. Add the plain flour and whisk for 1 to 2 minutes until smooth and lightly foaming.
- Gradually whisk in the whole milk until smooth, then cook, whisking often, for 6 to 8 minutes until very thick and glossy. Stir in the nutmeg and a little black pepper.
- Pour the béchamel over the meat layer and smooth the top. Bake for 35 to 40 minutes until set and golden, with gentle bubbling at the edges.
- Rest for 15 minutes before slicing so the layers set neatly. Serve warm.
Recipe notes
Tips
- Cook the penne 1 to 2 minutes less than the packet suggests so it stays firm after baking.
- For a smooth béchamel, add the milk gradually and keep whisking, especially around the edges of the pan where it can catch.
- If serving vulnerable groups, make sure the béchamel is fully cooked and the bake is piping hot throughout.
Substitutions
- Replace Penne with Rigatoni for a more traditional tubular pasta shape that holds the sauce well.
- Replace Ground cinnamon with a smaller pinch of Ground nutmeg for a less sweet spice note in the meat sauce.
- Replace Extra virgin olive oil with Unsalted butter for sautéing the onion if you want a richer base.
Storage
- Refrigerate up to 3 days
- Cool completely, then cover and refrigerate. Reheat portions in a 180°C (355°F) oven for 20 to 25 minutes until piping hot; cover loosely if the top is browning too quickly. Freeze well-wrapped portions for up to 2 months and defrost overnight in the fridge before reheating.
