Caldo Tlalpeño (Spicy Chicken and Vegetable Soup with Chickpeas)

A bowl of caldo tlalpeño brings together the clarity of a chicken broth with the substance of a full meal: tender shredded chicken, chickpeas and vegetables in a tomato-based soup scented with chipotle. The chilli gives a smoky warmth rather than aggressive heat, while carrots and courgette keep the broth light and fresh. Bone-in thighs help build savoury depth as they simmer, then the soup is finished with lime juice and fresh coriander for brightness. It is the kind of Mexican soup that feels restorative, flexible and satisfying, easy enough for dinner yet generous enough to serve as a complete main course.

Why this recipe works

  • Smoky, savoury broth: Simmering chicken, tomato, onion, garlic and chipotle together gives the broth depth without needing a long cooking time.
  • Bright finish: Lime juice added off the heat sharpens the tomato broth and balances the richness of the chicken.
  • Hearty but not heavy: Chickpeas, vegetables and shredded chicken make the soup filling while keeping the broth light and clear.

Adjust the heat

  • For less heat: Shake out more of the chipotle seeds before adding it, or use a smaller piece of chilli.
  • For a stronger kick: Leave more seeds in the chipotle or add extra chilli gradually, tasting the broth as it simmers.
  • Keep the heat rounded: Finish with lime and coriander after simmering; their brightness keeps the smoky chilli from tasting too heavy.

Ingredient notes

  • Bone-in chicken adds body: Bone-in thighs help create a more savoury broth and stay tender enough to shred after simmering.
  • Add vegetables in stages: Carrots need a little longer than courgette, so staggering them keeps the vegetables tender rather than mushy.
  • Add lime to taste: Stir in most of the lime off the heat, then offer the rest at the table so each bowl can be sharpened to preference.

Make-ahead tips

  • Make the soup ahead: The soup can be cooked in advance, cooled quickly and refrigerated in a sealed container.
  • Reheat gently: Warm on the hob until piping hot, adding a splash of stock if the soup has thickened in storage.
  • Freeze for longer storage: Freeze the cooled soup in portions, then defrost overnight in the fridge before reheating.

  1. Finely chop the onion and slice the garlic. Roughly chop the tomatoes. Snip the chipotle pepper into a few pieces, shaking out some seeds if you want it milder.
  2. Put the onion, garlic, tomatoes, chipotle, chicken thighs, chicken stock and fine sea salt into a large pot. Bring to a gentle boil, then reduce to a steady simmer and cook for 20 minutes, skimming any foam from the surface.
  3. Meanwhile, peel and slice the carrots into bite-size pieces. Cut the courgette into bite-size pieces. Rinse and drain the chickpeas.
  4. Lift out the chicken and set it on a board until cool enough to handle. Add the carrots to the pot and simmer for 8 minutes, then add the courgette and chickpeas and simmer for 5 to 7 minutes more, until the vegetables are tender but not mushy.
  5. Pull the chicken from the bones and tear into bite-size pieces, discarding skin and bones. Return the chicken to the soup and simmer for 2 minutes to heat through. Taste and adjust with a little more salt if needed.
  6. Finely chop the coriander and squeeze the limes. Take the pot off the heat and stir in most of the lime juice, then add most of the coriander. Serve hot with the remaining coriander and lime juice at the table.

Recipe notes

Tips

  • For a clearer broth, keep the soup at a gentle simmer rather than a rolling boil, and skim the surface during the first 10 minutes.
  • If serving anyone who is pregnant, elderly, or immunocompromised, make sure the chicken is cooked until piping hot throughout before shredding and returning it to the pot.

Substitutions

  • Replace Chicken thighs with Chicken breast cutlets for a leaner soup; add them for the last 12 to 15 minutes of simmering so they stay tender.
  • Replace Courgette with Carrot for a simpler vegetable mix; add the extra carrot at the same time as the first carrots.

Storage

  • Refrigerate up to 3 days
  • Cool quickly, then refrigerate in a sealed container for up to 3 days. Reheat gently on the hob until piping hot; add a splash of chicken stock if it has thickened. Freeze for up to 3 months and defrost overnight in the fridge before reheating.
