Brazilian Black Bean Bowl
Why this recipe works
- Simple depth: Onion, garlic and bay leaves give canned black beans a more rounded, slow-simmered flavour.
- Bright finish: Orange and lime cut through the richness of the beans and olive oil, keeping the bowl fresh.
- Good for planning ahead: The rice and beans reheat well, while the citrus can be added fresh just before serving.

Adjust the heat
- For less heat: Reduce or omit the chilli flakes and let the citrus provide the lift instead.
- For more heat: Add extra chilli flakes to the kale or finish the bowl with a hot sauce that suits black beans.
Texture tips
- For thicker beans: Mash a small spoonful of beans into the liquid near the end of simmering to create a more stew-like texture.
- Keep the kale lively: Cook the kale over medium-high heat so it wilts quickly and develops a few crisp edges rather than steaming.
Make-ahead tips
- Store the citrus separately: Keep orange and lime apart from the cooked rice and beans so the bowl tastes fresh when served.
- Reheat gently: Warm the rice and beans with a little water until piping hot, then add the kale and citrus after reheating.
Ingredient swaps
- Swap the rice: Jasmine rice works well if you prefer a softer, slightly stickier base.
- Use a softer green: Baby spinach can replace kale for a quicker-cooking, more tender finish.

Ingredients
Instructions
- Rinse the rice in a colander until the water runs mostly clear. Tip into a saucepan with 300 ml water and 0.5 tsp of the salt, bring to the boil, then cover and cook on the lowest heat for 12 minutes. Take off the heat and leave, covered, for 10 minutes.
- Meanwhile, peel and finely chop the onion, and finely chop the garlic. Warm 1 tbsp of the olive oil in a saucepan over a medium heat, then cook the onion with a pinch of the salt for 6 to 8 minutes until soft. Stir in the garlic and cook for 30 seconds until fragrant.
- Add the bay leaves and the black beans (with their liquid) to the pan, then add 150 ml water. Bring to a gentle simmer and cook for 12 to 15 minutes, stirring occasionally, until the beans are glossy and the liquid has thickened slightly. Season with another pinch of salt if needed, then remove the bay leaves.
- Strip the kale leaves from any tough stems and tear into bite-sized pieces. Heat the remaining 1 tbsp olive oil in a large frying pan over a medium-high heat, add the kale and cook for 3 to 5 minutes until wilted with a few crisp edges. Stir in the chilli flakes and a pinch of the salt for the last 30 seconds.
- Peel the orange and slice into rounds or segments, and cut the lime into wedges. Fluff the rice with a fork, then divide between two bowls and spoon over the beans. Top with the kale and orange, then squeeze over lime to finish.
Recipe notes
Tips
- For a thicker, more stew-like bean topping, mash a spoonful of beans against the side of the pan during the last few minutes of simmering.
- If you are serving anyone who is vulnerable, use thoroughly heated beans and avoid cross-contamination from raw produce by washing the orange and lime before peeling.
Substitutions
- Replace basmati rice with jasmine rice for a slightly stickier, more fragrant bowl.
- Replace kale with baby spinach for a softer, quicker-cooking green.
Storage
- Refrigerate up to 3 days
- Store rice and beans together in an airtight container; keep the orange and lime separate and add fresh when serving. Reheat the rice and beans in a saucepan with a splash of water over a low heat until piping hot, or in the microwave, then top with the kale and citrus.
