Greek Chicken Bowl with Lemon
Why this recipe works
- Bright, balanced flavour: Lemon juice and zest cut through the olive oil, chicken and feta, keeping the bowl fresh rather than heavy.
- Good texture contrast: Warm rice and golden chicken sit alongside crisp cucumber, juicy tomato, creamy yoghurt sauce and crumbly feta.
- Easy to prep ahead: The rice, chicken, salad and sauce can be stored separately, so the bowl stays fresh when assembled later.

Ingredient notes
- Drain the cucumber well: Squeezing the grated cucumber before mixing it into the yoghurt keeps the sauce thick and spoonable.
- Use dried oregano confidently: Dried oregano suits the quick chicken marinade because it disperses easily and gives a familiar Greek-style herb note.
- Finish with lemon to taste: A final squeeze of lemon after cooking brightens the chicken and lifts the whole bowl.
Texture tips
- Keep the chicken juicy: Cook the chicken in a single layer so it browns quickly rather than steaming in the pan.
- Keep the sauce thick: Let the yoghurt sauce sit briefly while preparing the salad; this helps the garlic and cucumber flavour settle without thinning it too much.
Make-ahead tips
- Store in separate containers: Keep the rice, chicken, salad and yoghurt sauce apart in the fridge so the salad stays crisp and the sauce does not loosen into the rice.
- Reheat only the warm components: Warm the rice and chicken until piping hot, then add the salad, feta, mint and yoghurt sauce just before serving.
Ingredient swaps
- For a juicier chicken option: Boneless skinless chicken thighs can replace chicken breast; cook them a little longer until fully cooked through.
- Change the grain: Brown rice works well if you prefer a nuttier base, but it will need extra cooking time and more water as needed.
- Swap the herb: Fresh parsley can replace mint for a more classic, grassy herb finish.

Instructions
- Rinse the rice, then tip into a saucepan with the water and 0.5 tsp of the fine sea salt. Bring to the boil, cover, then cook on the lowest heat for 12 minutes. Take off the heat and leave covered for 10 minutes, then fluff with a fork.
- While the rice cooks, slice the chicken breast into bite-size pieces. Finely grate 1 clove of the garlic into a bowl, then zest and juice half the lemon into the same bowl. Stir in the dried oregano, 1 tbsp of the extra virgin olive oil, 0.25 tsp of the black pepper, and a pinch of the remaining fine sea salt, then toss in the chicken.
- Heat a large frying pan over medium-high heat and cook the chicken in a single layer until golden and cooked through, 6 to 8 minutes, turning once or twice. If the pan looks dry, add a splash of water to help it along. Take off the heat and squeeze over the remaining lemon half to brighten the flavour.
- Make the yoghurt sauce: coarsely grate half the cucumber, then squeeze out excess liquid with your hands. Finely grate in the remaining garlic clove, then stir through the greek yogurt with 1 tbsp extra virgin olive oil and a pinch of fine sea salt. Set aside while you prep the salad.
- Dice the remaining cucumber and halve the cherry on the vine tomato, then toss together with a pinch of fine sea salt and the remaining black pepper. Roughly chop the fresh mint and crumble the feta cheese. Divide the rice between bowls, top with chicken and salad, then spoon over the yoghurt sauce and finish with feta and mint.
Recipe notes
Tips
- For the best texture, squeeze as much liquid as you can from the grated cucumber before stirring it into the greek yogurt, so the sauce stays thick.
- If you are cooking for anyone vulnerable, use pasteurised greek yogurt and make sure the chicken is cooked until piping hot all the way through with no pink in the centre.
Substitutions
- Replace chicken breast with chicken thighs boneless skinless for a juicier result; cook for a couple of minutes longer until cooked through.
- Replace fresh mint with fresh parsley for a more classic herb finish.
- Replace long-grain white rice with brown rice, but allow extra cooking time and add more water as needed.
Storage
- Refrigerate up to 3 days
- Store the rice, chicken, salad, and yoghurt sauce in separate airtight containers for the best texture. Reheat the rice and chicken in the microwave until piping hot, and add the salad, feta cheese, and fresh mint after reheating.
