Gomae Spinach Grain Bowl with Sesame Dressing and Rice
Why this recipe works
- Nutty depth: Freshly crushed roasted sesame seeds release their oils into the dressing, giving the spinach a fuller, more aromatic flavour.
- Balanced dressing: Soy sauce brings salt and umami, while rice vinegar and a little sweetness keep the sesame dressing from feeling heavy.
- Clean texture contrast: Tender dressed spinach sits over warm sticky rice, with cucumber and spring onion adding crispness and freshness.

Authenticity notes
- Gomae context: Gomae is a Japanese sesame dressing often used with blanched greens. Serving it over rice turns a classic side dish into a simple, complete bowl.
- Bowl-style serving: The cucumber and spring onion are a fresh bowl-style addition, adding crunch and lift to the sesame-coated spinach.
Texture tips
- Squeeze the spinach well: After blanching and cooling, remove as much water as possible from the spinach so the sesame dressing stays thick and clingy.
- Adjust the sesame texture: Grind the sesame more finely for a smoother dressing, or leave a few seeds intact for a lightly coarse, nutty finish.
Ingredient swaps
- Vinegar swap: Apple cider vinegar can replace rice vinegar if needed, giving the dressing a slightly fruitier tang.
- Softer sweetness: Maple syrup can be used instead of caster sugar for a rounder, more mellow sweetness.
Make-ahead tips
- Keep the parts separate: Store the rice and dressed spinach in separate airtight containers to preserve the best texture.
- Reheat only the rice: Warm the rice with a splash of water until piping hot, then add the spinach, cucumber and spring onion just before serving.

Ingredients
Instructions
- Rinse the short-grain rice in cold water until the water runs mostly clear. Tip into a saucepan, cover with fresh water, bring to the boil, then reduce to a low simmer and cover. Cook for 12 minutes, then take off the heat and leave covered for 10 minutes.
- Bring a separate saucepan of water to the boil. Add the spinach and cook for 45 to 60 seconds until just wilted and bright green. Drain in a colander and rinse under cold water, then squeeze out as much water as you can.
- In a mortar, grind the roasted sesame seeds until mostly crushed with a few whole seeds left for texture. Stir in the caster sugar, light soy sauce, rice vinegar and toasted sesame oil to make a thick, spoonable dressing. Taste and adjust by grinding a little more if you want it smoother.
- Slice the cucumber into thin half-moons and finely slice the spring onion. Put the spinach in a bowl and toss with the sesame dressing until evenly coated. Divide the warm rice between two bowls and top with the dressed spinach, cucumber and spring onion.
Recipe notes
Tips
- Squeeze the spinach very well before dressing, otherwise the gomae sauce will turn watery.
- For the best flavour, grind the roasted sesame seeds just before mixing the dressing so the oils stay fragrant.
- If you prefer a looser dressing, stir in 1 to 2 tsp water a little at a time until it coats the spinach nicely.
Substitutions
- Replace rice vinegar with apple cider vinegar for a slightly fruitier tang.
- Replace caster sugar with maple syrup for a softer sweetness.
Storage
- Refrigerate up to 2 days
- Store the rice and dressed spinach in separate airtight containers for the best texture. Eat cold or reheat the rice in the microwave with a splash of water until piping hot, then top with the spinach, cucumber and spring onion.
