Latin Veggie Burrito Bowl
Why this recipe works
- Warm and fresh contrast: Soft rice and beans are balanced by raw tomato salsa and sliced avocado, so the bowl feels layered rather than heavy.
- Bright acidity: Lime juice and ripe tomato cut through the richness of the avocado and lift the earthy black beans.
- Efficient workflow: The rice cooks while the vegetables sauté, keeping the overall cooking time practical for a weekday meal.

Adjust the heat
- For less heat: Remove the jalapeno seeds before chopping, or use a smaller amount and add more only after tasting.
- For more heat: Keep the jalapeno seeds in, or finish the bowl with extra chopped chilli if you prefer a sharper kick.
- Keep it balanced: Extra lime and avocado help soften the chilli heat without dulling the fresh flavour of the bowl.
Timing notes
- Rest the rice: Leaving the rice covered after cooking lets it finish steaming and gives a fluffier texture.
- Serve once assembled: Add the salsa and avocado just before serving so the toppings stay fresh and the avocado remains bright.
- Use the cooking time well: Prepare the salsa, coriander and avocado while the rice cooks and rests.
Make-ahead tips
- Keep toppings separate: Store the rice, beans and peppers together, but keep the tomato salsa and avocado separate until serving.
- Reheat gently: Warm the rice and bean mixture in a frying pan with a splash of water until piping hot, then add the fresh toppings.
- Good for lunches: The cooked base keeps well in the fridge for up to 3 days, making it useful for planned lunches.
Ingredient notes
- Choose the avocado carefully: Use an avocado that is ripe but still firm enough to slice cleanly and hold its shape in the bowl.
- Rinse the black beans: Draining and rinsing canned black beans removes excess canning liquid and helps the cumin-spiced oil coat them evenly.
- Adjust the lime: Taste before serving and add extra lime if the bowl needs more brightness against the beans and rice.

Instructions
- Rinse the rice in cold water until the water runs mostly clear. Tip into a saucepan with 300 ml water and 0.5 tsp of the salt, bring to the boil, then cover and cook on low for 10 minutes. Remove from the heat and leave, covered, for 5 minutes, then fluff with a fork.
- Meanwhile, slice the onion and pepper, and finely chop the jalapeno. Warm the olive oil in a large frying pan over medium-high heat, then sauté the onion and pepper for 6 to 8 minutes until softened and lightly browned. Stir in the cumin, remaining salt, and black pepper, and cook for 30 seconds until fragrant.
- Drain and rinse the black beans in a colander, then add them to the pan with 2 tbsp water. Cook for 2 to 3 minutes, stirring, until the beans are hot and coated in the spiced oil. Taste and adjust seasoning if needed.
- Dice the tomatoes and finely chop most of the coriander, reserving a little for serving. In a mixing bowl, combine the tomatoes with the juice of half the lime and a pinch of salt from the measured amount, then set aside. Slice the avocado and squeeze over the remaining lime juice to keep it bright.
- Divide the rice between two bowls and spoon over the beans, peppers, and onions. Top with the tomato salsa and avocado, then scatter over the reserved coriander. Serve straight away with any extra lime squeezed over the top.

Tips
- For a cleaner, fluffier result, keep the rice covered during the resting time so it finishes steaming.
- If you are sensitive to heat, remove the jalapeno seeds before chopping, or use only half.
- If serving to vulnerable groups, wash the coriander well and use ripe, unbruised avocado and tomatoes.
Substitutions
- Replace Fresh coriander with Fresh flat-leaf parsley for a milder, more herby finish.
- Replace Ground cumin with Taco seasoning for a more rounded, smoky spice profile.
- Replace Extra virgin olive oil with Avocado oil for a neutral, high-heat option.
Storage
- Refrigerate up to 3 days
- Store rice, beans, and peppers together in an airtight container; keep the tomato salsa and avocado separate. Reheat the rice and bean mixture in a frying pan with a splash of water until piping hot, then add fresh toppings just before serving.
