Spanish Chickpea and Tomato Bowl with Spinach
Why this recipe works
- Smoky depth: Blooming smoked paprika briefly in oil gives the tomato base a warm, savoury backbone.
- Fast but substantial: Canned chickpeas make the dish filling without needing a long simmer.
- Fresh finish: Lemon juice and zest lift the rich tomato sauce and keep the bowl tasting bright.

Ingredient notes
- Use smoked paprika, not hot paprika: Smoked paprika gives the dish its Spanish-style warmth without adding aggressive heat.
- Choose good canned tomatoes: Because the sauce is simple, well-flavoured chopped tomatoes make a noticeable difference.
- Add lemon at the end: Finishing with lemon after cooking keeps the flavour fresh rather than muted.
Texture tips
- For a richer sauce: Let the tomato base simmer a little longer before adding the chickpeas so it reduces and clings better.
- Keep the spinach vivid: Stir the spinach in only at the end and cook just until wilted.
Common mistakes
- Do not scorch the paprika: Stir it briefly, then add the tomatoes and water straight away to stop the spice catching.
- Avoid a watery bowl: Simmer the tomato mixture until slightly thickened before the chickpeas go in.
Make-ahead tips
- Good for meal prep: The chickpea and tomato base keeps well in the fridge and reheats cleanly for lunches.
- Reheat gently: Warm in a saucepan with a splash of water, stirring until piping hot throughout.
- Freezer-friendly: Freeze once cooled, then defrost overnight in the fridge before reheating.

Instructions
- Finely chop the onion and thinly slice the garlic. Drain and rinse the chickpeas, then set aside. Zest and juice the lemon, keeping them separate.
- Warm 1 tbsp of the olive oil in a saucepan over a medium heat. Add the onion with a pinch of the salt and cook for 6 to 8 minutes, stirring, until softened and lightly golden. Stir in the garlic and cook for 1 minute until fragrant.
- Stir in the smoked paprika for 20 seconds, then immediately add the tomatoes and water to stop it catching. Bring to a gentle simmer and cook for 8 minutes, stirring occasionally, until slightly thickened. Season with the remaining salt and the black pepper.
- Add the chickpeas and simmer for 5 minutes so they heat through and the sauce coats them. Stir in the spinach in handfuls and cook for 1 to 2 minutes until just wilted. Taste and adjust seasoning if needed.
- Divide between bowls and finish each with the remaining olive oil. Add lemon juice to taste and a little lemon zest for brightness. Serve straight away.
