Portuguese Chickpea Bowl with Chouriço and Greens
Why this recipe works
- Built-in savoury depth: Browning the chouriço first flavours the oil, so the onion, garlic, paprika and chickpeas all pick up its smoky richness.
- Fast but substantial: Canned chickpeas keep the cooking time short while still giving the bowl a hearty, satisfying base.
- Bright finish: Lemon juice cuts through the richness of the sausage and olive oil, keeping the final dish fresh rather than heavy.

Ingredient notes
- Choose a firm chouriço-style sausage: A smoked, cured sausage with good fat content will brown well and release enough flavoured oil to season the chickpeas.
- Drain the chickpeas thoroughly: Well-drained chickpeas sauté more cleanly and absorb the paprika-scented oil instead of turning watery.
- Spinach keeps it quick: Spinach wilts almost immediately; heartier greens such as kale need a little longer in the pan to become tender.
Common mistakes
- Do not scorch the paprika: Keep the heat moderate when the smoked paprika goes in. If the pan looks dry, add a splash of water so it blooms without turning bitter.
- Avoid steaming the chickpeas: Let excess liquid drain away before cooking; too much moisture prevents the chickpeas from taking on flavour from the pan.
Make-ahead tips
- Good for meal prep: The chickpea and chouriço mixture keeps well in the fridge and can be reheated for quick lunches.
- Reheat gently: Warm in a frying pan with a splash of water until piping hot, then refresh with extra lemon if the flavours need lifting.
- Freezer-friendly: Freeze after cooking, then defrost overnight in the fridge before reheating thoroughly.
Serving ideas
- Add bread: Serve with crusty bread to catch the paprika-rich olive oil at the bottom of the bowl.
- Make it more filling: Spoon over cooked rice or roasted potatoes if you want a larger supper.
- Finish fresh: A final squeeze of lemon or a little chopped parsley adds brightness just before serving.

Ingredients
Instructions
- Drain and rinse the chickpeas in a colander, then leave to drain well. Slice the chorizo into bite-size pieces, thinly slice the onion, and finely chop the garlic. Halve the lemon and juice it.
- Heat 1 tbsp of the olive oil in a large frying pan over a medium heat. Add the chorizo and cook for 4 to 5 minutes, stirring, until it releases its oils and starts to brown. Scoop the chorizo onto a plate, leaving the flavoured oil in the pan.
- Add the onion to the pan with a pinch of the fine sea salt and cook for 6 to 8 minutes until soft and lightly golden. Stir in the garlic and smoked paprika and cook for 30 seconds until fragrant. If the pan looks dry, add a splash of water to stop the paprika catching.
- Tip in the chickpeas and toss well to coat, then cook for 4 to 5 minutes until hot through. Return the chorizo to the pan and stir to combine. Season with the remaining fine sea salt and the black pepper.
- Add the spinach in handfuls and cook for 1 to 2 minutes until just wilted. Take off the heat and stir through the lemon juice and the remaining 1 tbsp olive oil. Divide between two bowls and serve warm.

Tips
- For the best texture, let the chickpeas drain well so they sauté rather than steam.

- If serving anyone who is pregnant, elderly, or immunocompromised, make sure the chorizo and chickpeas are heated until piping hot throughout.
Substitutions
- Replace Spinach with Kale for a heartier green; cook it a few minutes longer until tender.
- Replace Smoked paprika with Sweet paprika for a milder, less smoky flavour.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container for up to 3 days. Reheat in a frying pan with a splash of water over a medium heat until piping hot, or microwave in short bursts, stirring halfway. Freeze for up to 2 months and defrost overnight in the fridge before reheating.
