Vietnamese Lemongrass Chicken and Jasmine Rice Bowl
Why this recipe works
- Fragrant savoury base: Finely grated lemongrass and garlic cling to the chicken, giving the meat a bright aromatic flavour before it hits the pan.
- Balanced dressing: Lime, fish sauce and palm sugar create a sharp, salty-sweet dressing that seasons the salad and brings the rice bowl together.
- Fresh contrast: Soft jasmine rice and golden chicken are balanced by crisp cucumber, carrot and torn herbs, keeping the bowl light rather than heavy.

Ingredient notes
- Use the tender part of the lemongrass: Trim away the tough outer layers and grate only the pale inner core so the flavour disperses evenly without fibrous pieces.
- Choose a good fish sauce: Fish sauce is central to both the chicken and dressing, so use one with a clean savoury aroma rather than a harsh, overly salty finish.
- Balance the dressing to taste: Palm sugar gives roundness, but the dressing should still taste bright and savoury; adjust with a little extra lime or fish sauce if needed.
Timing notes
- Let the rice stand covered: The covered resting time after cooking helps the jasmine rice finish steaming and gives a fluffier texture.
- Rest the chicken before slicing: A short rest keeps the juices in the meat and makes the slices cleaner.
- Best served cool or room temperature: The bowl is designed to be eaten without piping-hot rice, which keeps the herbs fresh and the salad crisp.
Make-ahead tips
- Keep the components separate: Store the rice, chicken and dressed salad separately so the vegetables stay crisp and the rice does not absorb too much dressing.
- Reheat only the chicken if preferred: Warm the chicken in a frying pan until piping hot, then serve with the chilled salad and room-temperature rice.
- Good for packed lunches: The components hold well for up to two days in the fridge, making this a practical lunch bowl when assembled just before eating.
Common mistakes
- Watch the lemongrass in the pan: The grated aromatics can catch if the heat is too fierce, so aim for a steady medium-high heat and turn the chicken once it is deeply golden.
- Avoid overcooking chicken breast: If using breast instead of thighs, reduce the cooking time slightly and remove it as soon as it is cooked through.
- Do not store everything mixed: Combining the salad, rice and chicken too early can make the vegetables limp and the rice wet.

Instructions
- Rinse the rice in cold water until the water runs mostly clear. Tip into a saucepan with the water, bring to the boil, then cover and cook on the lowest heat for 12 minutes. Take off the heat and leave, covered, for 10 minutes, then fluff with a fork and spread on a plate to cool to room temperature.
- Trim the lemongrass, then finely grate the tender inner part; finely grate the garlic. Mix the lemongrass and garlic with 1 tbsp fish sauce and the sunflower oil, then coat the chicken well. Leave to marinate while you prepare the salad and dressing.
- Cut the cucumber into thin half-moons and coarsely grate the carrot. Juice the limes into a bowl, then whisk in the palm sugar, 2 tbsp fish sauce and the water until the sugar dissolves. Add the cucumber and carrot and toss to coat.
- Heat a frying pan over medium-high heat. Add the chicken and cook for 5 to 7 minutes, turning once, until deeply golden and cooked through. Rest for 3 minutes, then slice.
- Roughly tear the mint and coriander. Divide the cooled rice between two bowls, top with the sliced chicken and the cucumber and carrot salad, then spoon over any dressing left in the bowl. Serve at room temperature.
Recipe notes
Tips
- For the best lemongrass flavour, use only the pale, tender inner part and grate it finely so it clings to the chicken.
- If serving to anyone who is pregnant, elderly, or immunocompromised, make sure the chicken is cooked until piping hot all the way through.
Substitutions
- Replace palm sugar with light brown sugar, using the same amount.
- Replace chicken thighs with chicken breast, reducing the pan-cooking time slightly to keep it juicy.
Storage
- Refrigerate up to 2 days
- Store rice, chicken, and salad separately in airtight containers. Reheat the chicken in a frying pan over medium heat until piping hot; the salad is best kept cold and crisp, and the rice can be eaten chilled or brought back to room temperature.
