Masala Quinoa Bowl (Spiced Quinoa with Chickpeas, Spinach and Yoghurt)
Why this recipe works
- Spices built into the base: Cooking the onion, ginger, garlic and spices before adding the quinoa gives the whole bowl a deeper, more integrated flavour.
- One-pan structure: The quinoa simmers directly with tomatoes and spices, so the grains absorb flavour while the sauce thickens around them.
- Fresh finish: Lemon juice, yoghurt and coriander cut through the warm spices and chickpeas, keeping the bowl bright rather than heavy.

Ingredient notes
- Rinse the quinoa well: Rinsing helps remove quinoa’s natural bitterness and gives the finished bowl a cleaner flavour.
- Bloom the spices briefly: Stirring the ground spices into the onion mixture before adding liquid helps release their aroma without making them taste raw.
- Add lemon off the heat: Finishing with lemon after cooking keeps the acidity fresh and lively.
Texture tips
- Aim for thick and spoonable: Cook uncovered after adding the chickpeas if the mixture looks too loose, so the tomato base reduces slightly.
- Keep the quinoa light: Drain the rinsed quinoa well before cooking so it absorbs the spiced tomato base rather than excess rinse water.
- Wilt the spinach gently: Fold the spinach in off the heat so it softens without turning dull or watery.
Make-ahead tips
- Keep toppings fresh: Store the quinoa base separately from the yoghurt, coriander and lemon for the best texture and flavour.
- Reheat with a splash of liquid: Warm the quinoa base gently with a little water until piping hot, stirring to loosen the texture.
- Freeze the base only: The cooked quinoa, chickpea and tomato mixture freezes well; add the yoghurt and herbs after reheating.
Dietary alternatives
- Make it vegan: Use a plain unsweetened plant-based yoghurt or leave the yoghurt off and add extra lemon and coriander for freshness.
- Dairy-free option: Swap the whole milk yoghurt for a dairy-free yoghurt with a neutral, tangy flavour.

Ingredients
Instructions
- Rinse the quinoa in a colander under cold running water until the water runs clearer, then drain well. Finely chop the onion, and finely grate the garlic and ginger.
- Heat the rapeseed oil in a saucepan over medium heat. Add the onion and fine sea salt, then cook for 6 to 8 minutes, stirring, until softened and lightly golden.
- Stir in the garlic and ginger and cook for 1 minute until fragrant. Add the ground cumin, ground turmeric and garam masala and cook for 30 seconds, stirring constantly.
- Add the quinoa, canned chopped tomatoes and water, then bring to a gentle simmer. Cover and cook on low for 15 minutes, stirring once halfway, until the quinoa is tender and most of the liquid is absorbed.
- Drain and rinse the chickpeas, then stir them into the quinoa. Cook, uncovered, for 3 to 5 minutes until the chickpeas are hot and the mixture looks thick and spoonable.
- Take the pan off the heat and fold through the baby spinach until just wilted. Squeeze in lemon juice to taste, then divide between bowls and top each with a spoon of whole milk yogurt and fresh coriander.
Recipe notes
Tips
- If the quinoa looks dry before it is tender, add a splash of water, cover again, and cook for a few minutes more.
- For a brighter finish, add the lemon juice off the heat so it stays fresh and punchy.
- If serving to anyone vulnerable to foodborne illness, use pasteurised whole milk yogurt and keep the bowl chilled until serving.
Substitutions
- Replace whole milk yogurt with greek-yogurt for a thicker, tangier topping.
- Replace rapeseed oil with olive-oil for a fruitier flavour.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Freeze the quinoa base (without whole milk yogurt and fresh coriander) for up to 2 months; defrost overnight in the fridge and reheat in a saucepan with a splash of water until piping hot, then add the toppings fresh.
