Black Bean and Sweetcorn Burrito Bowl

A burrito bowl takes the familiar elements of a filled burrito and serves them layered over rice, making it easy to customise and straightforward to eat with a fork. Here, lime-scented basmati rice forms a bright base for warm black beans and sweetcorn seasoned with cumin and chipotle, giving the bowl gentle heat and a smoky savoury depth. A quick tomato, red onion and coriander salsa keeps the flavours fresh, while avocado and soured cream add the cool, creamy finish that makes the dish satisfying without feeling heavy. It works well as a fast vegetarian lunch or light dinner, and the components can be kept separate for better texture when packing ahead.

Why this recipe works

  • Layered flavour: Cumin, chipotle, lime zest and fresh salsa build smoky, savoury and bright notes without a long cooking time.
  • Good texture balance: Fluffy rice, saucy beans, juicy tomato salsa, sweetcorn and creamy avocado keep the bowl varied and satisfying.
  • Fast assembly: Canned beans and sweetcorn make the filling quick to cook while the salsa comes together as the rice steams.

Adjust the heat

  • For a gentler bowl: Swap the chipotle powder for smoked paprika to keep the smoky flavour with less heat.
  • For more heat: Increase the chipotle slightly or finish with sliced chilli or hot sauce at the table.
  • Keep it balanced: Use extra lime juice or a little more soured cream if the beans taste too smoky or sharp.

Make-ahead tips

  • Store the parts separately: Keep the rice, bean mixture, salsa, avocado and soured cream apart so the bowl stays fresh rather than watery.
  • Reheat the base: Warm the rice and beans until piping hot, adding a splash of water if needed to loosen the bean mixture.
  • Assemble just before eating: Add the salsa, avocado and soured cream after reheating for the best contrast of warm and cool elements.

Dietary alternatives

  • Make it vegan: Use a plant-based soured cream or a spoonful of dairy-free yoghurt in place of the soured cream.
  • Make it dairy-free: Leave out the soured cream or replace it with a dairy-free alternative; the avocado still gives a creamy finish.
  • Naturally gluten-free: The bowl is based on rice, beans, vegetables and dairy, but check packaged spices and soured cream labels if needed.

Ingredient notes

  • Choose the right avocado: Use an avocado that is ripe but still firm enough to slice cleanly and hold its shape in the bowl.
  • Use fresh coriander if possible: Fresh coriander gives the salsa a brighter finish than dried herbs, which do not suit the raw tomato mixture as well.
  • Adjust the lime at the end: Taste both the salsa and bean mixture before serving, then add more lime juice if the bowl needs extra brightness.

  1. Rinse the rice until the water runs mostly clear. Tip into a saucepan with the water and 0.5 tsp of the fine sea salt, bring to the boil, then cover and cook on the lowest heat for 10 minutes. Remove from the heat and leave, covered, for 5 minutes.
  2. Meanwhile, finely dice half the red onion and dice the tomatoes. Finely chop the fresh coriander, then mix with the tomatoes, diced onion, most of the lime juice, and a pinch of the remaining salt. Set aside as a quick salsa.
  3. Drain and rinse the black beans and sweetcorn in a colander. Heat the olive oil in a large frying pan over a medium heat, then add the remaining red onion and cook for 3 to 4 minutes until softened. Stir in the ground cumin and chipotle powder for 30 seconds until fragrant.
  4. Add the black beans and sweetcorn to the pan with 2 tbsp water and the remaining salt. Cook for 4 to 5 minutes, stirring, until hot and lightly saucy. Taste and add a little more lime juice if you like it sharper.
  5. Fluff the rice with a fork, then stir through the lime zest and a squeeze of lime juice. Divide the lime rice between two bowls and spoon over the spiced beans and sweetcorn. Top with the salsa, sliced avocado, and a spoon of sour cream to finish.

Recipe notes

Tips

  • For a bowl that travels well, keep the salsa and sour cream separate and add just before eating so the rice stays fluffy.
  • If serving at room temperature, cool the rice quickly by spreading it on a plate for a few minutes before assembling.
  • If you are pregnant, elderly, or immunocompromised, choose pasteurised sour cream and keep the bowl chilled until serving.

Substitutions

  • Replace Basmati rice with Jasmine rice for a slightly stickier, more fragrant base.
  • Replace Chipotle powder with Smoked paprika for a milder, smoky flavour.
  • Replace Sour cream with Greek yogurt for a tangier, lighter finish.

Storage

  • Refrigerate up to 2 days
  • Store the rice and bean mixture in separate airtight containers in the fridge. Keep the salsa, avocado, and sour cream separate and add fresh when serving. Reheat the rice and beans in the microwave until piping hot, adding a splash of water to loosen if needed.
