Mexican Burrito Bowl (Lime Rice with Black Beans and Salsa)
Why this recipe works
- Layered flavour: Lime rice, cumin-spiced beans, fresh salsa and creamy toppings each bring a distinct element, so the bowl tastes balanced rather than heavy.
- Easy to assemble: The components are spooned directly into bowls, making the recipe practical for lunch, casual dinners or packed portions.
- Simple to adapt: The toppings can be adjusted easily, from a sharper sour cream finish to a milder cheese or a heartier brown rice base.

Make-ahead tips
- Keep components separate: Store the rice and bean mixture apart from the salsa so the fresh ingredients stay bright and the rice does not become wet.
- Add toppings last: Slice the avocado and add the Cheddar and sour cream just before serving for the best texture and colour.
- Reheat gently: Warm the rice and beans with a small splash of water over low heat until piping hot, then build the bowl with the cold toppings.
Ingredient swaps
- Use a creamier cheese: Monterey Jack can replace Cheddar for a milder, softer finish.
- Lighten the topping: Greek yoghurt works well in place of sour cream if you prefer a tangier, lighter topping.
- Change the rice base: Brown rice can be used instead of white rice, but it will need a longer cooking time until tender.
Texture tips
- For fluffier rice: Let the drained rice stand covered briefly, then fork it through before stirring in the lime zest and juice.
- Avoid a wet bowl: Drain the beans and corn well, and add only a splash of water to the pan if the mixture starts to catch.
- Balance the fresh elements: A spoonful of lime sour cream rounds out the acidity from the salsa and gives the bowl a softer finish.
Serving ideas
- Finish with herbs: Scatter over the remaining coriander just before serving to keep the flavour fresh.
- Add crunch if desired: Serve with tortilla chips on the side or crushed over the top for contrast.
- Add extra sharpness: A squeeze of lime at the table helps brighten the rice, beans and avocado.

Ingredients
Instructions
- Cook the rice in a saucepan of lightly salted boiling water for 10–12 minutes until tender. Drain well, then return to the pan off the heat. Finely zest the lime, squeeze the juice, and stir most of the zest and 1–2 tbsp juice through the rice.
- Finely dice the red onion and tomatoes, then roughly chop the fresh coriander. In a mixing bowl, combine half the onion with the tomatoes, most of the coriander, and a squeeze of lime juice. Season to taste with a pinch of salt if you like, then set aside.
- Drain and rinse the black beans, then drain the corn. Warm a frying pan over medium heat, add the beans and corn, and stir in the ground cumin and mild chilli powder. Cook for 4–6 minutes until hot, adding a splash of water if it looks dry.
- Halve, stone and slice the avocado. Grate the Cheddar cheese. Stir the remaining lime zest into the sour cream, and add a little more lime juice if you want it sharper.
- Divide the lime rice between two bowls. Spoon over the spiced beans and corn, then add the tomato salsa. Finish with the avocado, Cheddar, a dollop of sour cream, and the remaining coriander and onion.
