Chipotle Chicken Bowl with Coriander and Lime Rice

A chipotle chicken bowl takes the format of a hearty grain bowl and gives it smoky, Mexican-inspired flavour: marinated chicken, fragrant lime rice, beans, sweetcorn, avocado and fresh salsa layered in one satisfying dinner. Here, boneless thighs are coated with chipotle in adobo, lime, garlic, cumin and a touch of honey, then seared until charred at the edges but still juicy. Coriander and lime rice keeps the base bright, while black beans add substance and tomato salsa cuts through the heat. It is practical for weeknights, easy to portion, and flexible enough for extra toppings or a sharper finish of lime.

Why this recipe works

  • Smoky, layered marinade: Chipotle, lime, garlic, cumin and honey give the chicken heat, acidity, savoury depth and a little sweetness.
  • Good bowl contrast: Charred chicken, soft rice, creamy avocado, beans, sweetcorn and fresh salsa make each serving feel balanced rather than heavy.
  • Useful for planning ahead: The cooked chicken, rice, beans and corn can be stored separately, then finished with salsa and avocado just before serving.

Adjust the heat

  • For a milder bowl: Use less chipotle sauce and add extra lime to keep the marinade bright without increasing the heat.
  • For more heat: Add more chipotle sauce to the marinade, or finish the bowl with sliced jalapeños or a hot salsa.
  • Keep the heat balanced: Creamy avocado, sweetcorn and lime help soften the smokiness, so avoid removing all the fresh toppings if the chicken is quite spicy.

Texture tips

  • Build a proper char: Let the frying pan get hot before adding the chicken, then leave the pieces undisturbed for the first few minutes.
  • Rest before slicing: A short rest helps the chicken stay juicy and makes it easier to slice cleanly for the bowl.
  • Drain the rice well: If the rice needs draining, do it thoroughly before adding coriander and lime so the base stays fluffy rather than wet.

Make-ahead tips

  • Keep fresh toppings separate: Store the chicken, rice, beans and corn apart from the salsa and avocado to keep the bowl fresh.
  • Reheat gently: Warm the chicken and rice with a splash of water until piping hot, then add the salsa and avocado after heating.
  • Good for packed lunches: Cook the main components ahead and assemble just before eating, adding avocado at the last minute to prevent browning.

Authenticity notes

  • Mexican-American style: The bowl format is a modern Mexican-American approach, using familiar elements such as chipotle, beans, corn, lime and salsa rather than following one traditional regional dish.

Instructions

  1. In a bowl, mix the chipotle sauce with the juice of 1 lime, finely grated garlic, cumin, honey, fine sea salt and black pepper. Add the chicken thighs and turn to coat well. Leave to marinate for 15 minutes while you get everything else ready.
  2. Rinse the rice until the water runs mostly clear, then cook in a saucepan with a pinch of fine sea salt according to the packet until tender. Drain well if needed, then return to the pan off the heat. Stir through most of the chopped coriander and the juice of 1 lime.
  3. Dice the tomato and finely chop the red onion, then mix with the remaining coriander, 1 tbsp olive oil and a pinch of fine sea salt. Taste and add a little more lime juice if you want it sharper. Set aside as a simple salsa.
  4. Drain and rinse the black beans and corn. Warm them in a saucepan over low heat with a splash of water and a pinch of cumin, stirring until hot. Keep warm on the lowest heat.
  5. Heat 1 tbsp olive oil in a large frying pan over medium-high heat. Sear the chicken for 4 to 6 minutes per side until charred in spots and cooked through, then rest for 3 minutes before slicing. If the pan looks dry, add a spoonful of water to loosen the browned bits and spoon over the chicken.
  6. Halve, stone and slice the avocado. Divide the coriander lime rice between bowls, then top with black beans, corn, sliced chicken and avocado. Finish with the tomato salsa and serve straight away.

Recipe notes

Tips

  • For the best char, let the pan get properly hot before adding the chicken and avoid moving it for the first few minutes.
  • If you are cooking for anyone who is pregnant, elderly, or immunocompromised, make sure the chicken is cooked until piping hot throughout with no pink remaining.

Substitutions

  • Replace Chicken thighs with Chicken breast cutlets for a leaner bowl; reduce the searing time slightly to keep them juicy.
  • Replace Honey with Agave syrup for a similar sweetness in the marinade.
  • Replace Long-grain white rice with Brown rice, allowing extra cooking time and a little more water.

Storage

  • Refrigerate up to 3 days
  • Store chicken, rice, beans and corn in airtight containers in the fridge; keep the salsa and avocado separate. Reheat the chicken and rice in a microwave or in a saucepan with a splash of water until piping hot, then add salsa and avocado just before serving.
