Mexican Black Bean Bowl with Rice, Salsa and Avocado
Why this recipe works
- Fast but complete: Canned black beans and quick-cooked rice keep the bowl practical while still giving a filling mix of grains, legumes and fresh toppings.
- Warm spice, fresh finish: Cumin, garlic and onion season the beans, while lime, tomato, coriander and avocado add brightness, freshness and creaminess.
- Easy to adapt: The rice, beans and salsa can be served as a bowl, wrapped in tortillas, or paired with extra toppings depending on what you have available.

Make-ahead tips
- Keep toppings fresh: Store the rice and bean mixture separately from the salsa and avocado so the fresh ingredients stay bright rather than softening.
- Reheat gently: Warm the rice and beans with a splash of water until piping hot, then add the salsa and avocado just before serving.
- Prep ahead for faster assembly: The salsa ingredients can be chopped ahead, but add lime and salt closer to serving for the freshest texture.
Ingredient notes
- Choose a ripe avocado: Use an avocado that yields slightly when pressed; it should dice cleanly while still adding a creamy finish.
- Balance with lime: If the bowl tastes flat, a little more lime sharpens the beans and salsa without making the dish heavy.
- Use fresh coriander if possible: Fresh coriander gives the bowl its clean, citrusy lift; flat-leaf parsley is a milder alternative if preferred.
Texture tips
- Let the rice rest: Keeping the lid on during the resting time helps the rice finish steaming and makes it easier to fluff without breaking the grains.
- Add fresh toppings last: Spoon the salsa and avocado over the bowl just before eating to keep the contrast between warm beans and fresh toppings.

Instructions
- Rinse the basmati rice in a colander until the water runs mostly clear. Tip into a saucepan with the water and 0.25 tsp of the fine sea salt, bring to the boil, then cover and cook on the lowest heat for 10 minutes. Remove from the heat and leave, covered, for 5 minutes, then fluff with a fork.
- Meanwhile, finely dice half the red onion and put it in a mixing bowl. Dice the tomatoes, chop most of the fresh coriander, and add both to the bowl. Squeeze in half the lime juice, add 1 tbsp olive oil and a pinch of salt, then toss and set aside.
- Finely chop the remaining red onion and crush the garlic. Warm 1 tbsp olive oil in a frying pan over a medium heat, then cook the onion for 3 to 4 minutes until softened. Stir in the garlic and ground cumin and cook for 30 seconds until fragrant.
- Drain and rinse the canned black beans, then add them to the pan with the sweet corn kernels. Add 3 tbsp water, the remaining lime juice, the remaining salt and the black pepper, then simmer for 4 to 5 minutes until hot and lightly saucy. Taste and adjust with a little more salt if needed.
- Halve, stone and dice the avocado. Divide the rice between two bowls, spoon over the spiced beans and corn, then top with the tomato salsa and avocado. Finish with the remaining coriander and a final squeeze of lime if you like.
Recipe notes
Tips
- For fluffier rice, keep the lid on during the resting time, then fluff gently with a fork rather than stirring.
- If your salsa tastes flat, add a small pinch more fine sea salt and another squeeze of lime to sharpen it.
- If serving to anyone who is pregnant, elderly, or immunocompromised, make sure the beans and corn are heated until piping hot throughout.
Substitutions
- Replace Fresh coriander with Fresh flat-leaf parsley for a milder, more herbaceous finish.
- Replace Ground cumin with Garam masala for a warmer, more aromatic spice profile.
Storage
- Refrigerate up to 3 days
- Store the rice and bean mixture together in an airtight container; keep the tomato salsa and avocado separate. Reheat the rice and beans in a saucepan with a splash of water over a low heat until piping hot, then add the fresh toppings just before serving.
