Latin Sweet Potato Bowl

A Latin-inspired grain bowl makes a practical lunch by layering warm, seasoned components with fresh toppings. Here, sweet potato is roasted until tender and lightly browned, then served with smoky cumin-paprika black beans and fluffy basmati rice. A quick tomato, red onion and coriander salsa brings acidity and crunch, while avocado softens the heat of the spices and lime sharpens the finish. It is filling without feeling heavy, easy to assemble, and well suited to meal prep if the salsa and avocado are kept separate until serving.

Why this recipe works

  • Smoky, fresh balance: Cumin and smoked paprika give the sweet potato and beans warmth, while lime and salsa keep the bowl bright.
  • Good texture contrast: Tender roasted sweet potato, lightly saucy beans, fluffy rice, crisp salsa and creamy avocado each bring a different bite.
  • Easy to prep ahead: The rice, beans and roasted sweet potato store well, with the salsa and avocado added fresh before serving.

Texture tips

  • Roast, don’t steam: Keep the sweet potato in a single layer on the tray so the edges brown rather than soften in their own steam.
  • Drain the rice well: After boiling, drain thoroughly and keep covered so the grains stay warm and separate.

Make-ahead tips

  • Keep fresh toppings separate: Store the salsa and avocado away from the warm rice, beans and sweet potato to preserve their texture and freshness.
  • Reheat gently: Warm the rice, beans and sweet potato with a splash of water until piping hot, then add lime, salsa and avocado just before eating.

Ingredient swaps

  • Use brown rice for nuttiness: Brown rice gives a deeper, nuttier flavour, though it will need a longer cooking time than basmati.
  • Swap the herbs: Fresh parsley can replace coriander for a milder, less citrusy herbal finish.

  1. Heat the oven to 220°C (430°F). Peel the sweet potato and cut into 2 cm cubes.
  2. Toss the sweet potato with the olive oil, ground cumin, smoked paprika and 0.5 tsp of the fine sea salt. Spread on a baking tray and roast for 22 to 28 minutes, turning once, until browned at the edges and tender.
  3. Meanwhile, rinse the basmati rice until the water runs clearer. Cook in a saucepan of lightly salted water for 10 to 12 minutes until tender, then drain well and cover to keep warm.
  4. Drain and rinse the canned black beans, then tip into the saucepan with 3 tbsp water, the remaining fine sea salt, and a pinch each of ground cumin and smoked paprika taken from the measured amounts. Warm gently for 3 to 5 minutes, stirring, until hot and lightly saucy.
  5. Dice the tomato and finely chop the red onion. Chop most of the fresh coriander and mix with the tomato and onion, then squeeze in half the lime and season with a small pinch of fine sea salt.
  6. Divide the rice between two bowls and top with the warm black beans and roasted sweet potato. Slice the avocado and add to each bowl, spoon over the salsa, then finish with the remaining lime cut into wedges and the remaining coriander scattered over.

Recipe notes

Tips

  • For the best texture, spread the sweet potato out in a single layer so it roasts rather than steams.
  • If serving to anyone vulnerable, avoid offering this dish with under-ripe avocado; it is harder to digest and less pleasant to eat.

Substitutions

  • Replace basmati rice with brown rice for a nuttier flavour, but allow a longer cooking time.
  • Replace fresh coriander with fresh parsley for a milder, more herby finish.

Storage

  • Refrigerate up to 3 days
  • Store rice, beans and sweet potato together in an airtight container; keep the salsa and avocado separate. Reheat the rice, beans and sweet potato in the microwave or in a saucepan with a splash of water until piping hot, then add fresh salsa, avocado and lime.
