Millet Biryani Bowl (Biryani-Style Spiced Millet with Vegetables)
Why this recipe works
- Layered spice base: Onion, ginger, garlic, tomato and garam masala build a biryani-style foundation before the millet absorbs the stock.
- Efficient one-pan method: The vegetables and grains cook in the same saucepan, keeping the workflow simple and the flavours integrated.
- Fresh finish: Mint and lemon brighten the warm spices and stop the bowl from feeling heavy.

Timing notes
- Rest before fluffing: Letting the millet sit covered after cooking helps the grains finish steaming and separate more cleanly.
- Prepare the vegetables first: Slicing, dicing and grating everything before cooking keeps the spice base moving without risk of catching.
Texture tips
- Keep the simmer gentle: Once the stock is added, low heat helps the millet cook evenly without turning mushy at the bottom.
- Fluff lightly: Use a spoon to loosen the grains after resting rather than stirring vigorously, which can make the millet clump.
Ingredient notes
- Rinse the millet well: Rinsing removes excess surface starch and helps the cooked grains feel lighter.
- Garam masala sets the profile: Garam masala gives the bowl its warm biryani-style character; curry powder will make the flavour simpler and more direct.
Make-ahead tips
- Good for meal prep: The cooked millet bowl keeps well in the fridge and reheats best with a small splash of water to restore moisture.
- Freeze in portions: Cool quickly, portion into sealed containers and defrost overnight in the fridge before reheating until piping hot throughout.

Ingredients
Instructions
- Rinse the millet in a sieve under cold water until the water runs mostly clear, then drain well. Finely slice the onion, dice the tomatoes, and cut the carrot into small dice. Finely grate the garlic and ginger.
- Heat the sunflower oil in a saucepan over medium heat. Add the onion and 0.5 tsp of the fine sea salt, then cook for 8 to 10 minutes, stirring, until softened and lightly golden.
- Stir in the carrot and cook for 2 minutes. Add the garlic, ginger and garam masala and cook for 30 to 60 seconds until fragrant. Add the tomatoes and cook for 4 to 5 minutes until they soften and turn saucy.
- Stir in the millet, then pour in the hot vegetable stock and add the remaining fine sea salt. Bring to a gentle simmer, cover, and cook on low for 18 to 20 minutes until the millet is tender and the liquid is absorbed. If it looks dry before the millet is tender, add a small splash of water and continue cooking.
- Stir in the frozen peas, cover again, and cook for 3 to 4 minutes until the peas are hot. Take off the heat and rest, covered, for 5 minutes. Fluff with a spoon.
- Finely chop the fresh mint and stir most of it through the millet. Cut the lemon and squeeze over to taste. Serve in bowls, finishing with the remaining mint.
Recipe notes
Tips
- Keep the heat low once the stock goes in; a gentle simmer helps the millet cook evenly without catching on the base of the pan.
- For the best texture, let the biryani rest covered before fluffing so the grains finish steaming and separate more easily.
- If serving to anyone who is pregnant, elderly, or immunocompromised, make sure the dish is reheated until piping hot throughout.
Substitutions
- Replace Fresh mint with Fresh coriander for a different, equally fresh finish.
- Replace Sunflower oil with Olive oil for a fruitier base.
- Replace Garam masala with Curry powder for a simpler, more direct spice profile.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container. Reheat in a saucepan with a splash of water, covered, over low heat until piping hot, or microwave covered, stirring halfway. Freeze in portions for up to 2 months and defrost overnight in the fridge before reheating.
