Chicken Caesar Salad Wrap
Why this recipe works
- Fast lunch format: The chicken grills quickly while the salad filling comes together in one bowl, keeping the whole recipe suitable for a short lunch window.
- Crisp, creamy and crunchy: Romaine adds freshness, Caesar dressing coats the leaves, and croutons bring the crunch that makes a Caesar-style wrap distinctive.
- Brightened dressing: Lemon juice lifts the creamy Caesar dressing and helps balance the savoury chicken, Parmesan and tortilla.

Texture tips
- Keep the croutons crisp: Add the croutons just before rolling so they keep their crunch instead of softening in the dressing.
- Rest the chicken before slicing: A short rest helps the grilled chicken retain its juices, making the wrap more tender and easier to eat.
Make-ahead tips
- Pack components separately: For a packed lunch, keep the cooked chicken, dressed lettuce and croutons separate, then assemble shortly before eating.
- Cook the chicken ahead: The grilled chicken can be cooked and chilled in advance, then sliced and added to the wrap when ready to serve.
Ingredient notes
- Use crisp romaine: Romaine holds up better than softer leaves and gives the wrap the clean crunch expected from a Caesar salad.
- Adjust the lemon: If the Caesar dressing is thick or very rich, a little extra lemon juice helps loosen it and sharpen the flavour.

Instructions
- Preheat a grill to medium-high. Season the chicken with the black pepper, then squeeze over about half the lemon juice.
- Grill the chicken for 5 to 7 minutes per side, until nicely marked and cooked through. Rest for 3 minutes, then slice.
- Meanwhile, roughly chop the romaine lettuce and add it to a mixing bowl. Add the Caesar dressing, the remaining lemon juice, most of the Parmesan (reserve a little for finishing), and toss to coat.
- Warm the flour tortillas briefly on the grill until pliable. Divide the dressed lettuce between the tortillas, top with the sliced chicken, then scatter over the croutons and the reserved Parmesan.
- Roll each tortilla into a tight wrap, tucking in the sides as you go. Serve straight away.
Recipe notes
Tips
- For a tidier wrap, keep the croutons whole and add them right before rolling so they stay crunchy.
- If your Caesar dressing is very thick, loosen it with a little extra lemon juice so it coats the lettuce evenly.
Substitutions
- Replace Parmesan with Grana Padano cheese for a similar salty finish.
- Replace flour tortillas with whole-wheat pita bread for a different wrap style.
Storage
- Refrigerate up to 1 days
- Best eaten straight away. If packing ahead, keep the dressed lettuce and croutons separate, then assemble just before eating; store the cooked chicken chilled and use within 1 day.
