Korean Chicken Lettuce Cups

Lettuce cups are a light, hands-on way to serve a hot savoury filling, using crisp leaves in place of a wrap so every bite stays fresh and quick to assemble. Here, minced chicken is stir-fried until browned, then coated in a glossy gochujang, soy and honey glaze that gives the filling its spicy-sweet, umami-rich character. Romaine leaves provide crunch and structure, while spring onions, sesame seeds and lime add lift at the end. Serve them straight away as a Korean-inspired appetiser, party dish or fast weeknight meal with plenty of napkins and extra lime wedges on the side.

Why this recipe works

  • Fresh crunch against sticky filling: Warm glazed chicken sits inside crisp lettuce leaves, giving the cups a clean contrast rather than a heavy finish.
  • Big flavour from a short ingredient list: Gochujang, soy sauce, garlic and honey quickly build savoury depth, sweetness and gentle heat.
  • Fast weeknight method: Minced chicken cooks quickly in a wok or frying pan, and the glaze reduces in just a few minutes.

Adjust the heat

  • For less heat: Reduce the gochujang slightly and balance the glaze with a little extra honey or lime at the end.
  • For more heat: Add more gochujang to the glaze, tasting as you go so the sauce stays balanced rather than overly salty.

Ingredient notes

  • Choose sturdy lettuce leaves: Romaine gives good crunch and structure; smaller inner leaves make neater cups and are easier to fold.
  • About gochujang: Gochujang is a Korean fermented chilli paste with sweetness, savouriness and heat, so it seasons the glaze as well as spicing it.
  • Use lime to finish: A squeeze of lime just before eating cuts through the sticky glaze and makes the chicken taste brighter.

Make-ahead tips

  • Keep the filling and lettuce separate: Store the cooked chicken filling separately from the lettuce so the leaves stay crisp.
  • Reheat gently: Warm the filling in a frying pan with a small splash of water until piping hot, then assemble with fresh lettuce, sesame and lime.

  1. Finely slice the spring onions, keeping a small handful aside for serving. Finely grate or crush the garlic. Cut the lime into wedges and set aside.
  2. Separate the romaine lettuce into whole leaves, then rinse and shake dry. If the leaves are large, trim the thickest part of the rib so they fold easily. Arrange on a platter.
  3. In a small bowl, stir together the gochujang, light soy sauce and honey until smooth. This will be your sticky glaze. Keep it close to the hob.
  4. Heat the vegetable oil in a wok (or large frying pan) over medium-high heat. Add the minced chicken and cook for 5 to 7 minutes, breaking it up, until cooked through and starting to brown. Stir in the garlic and cook for 30 seconds until fragrant.
  5. Pour in the gochujang mixture and add most of the spring onions. Stir-fry for 2 to 3 minutes until the sauce clings to the chicken and looks glossy and sticky. Remove from the heat.
  6. Spoon the hot chicken into the lettuce leaves. Top with the reserved spring onions and the roasted sesame seeds. Serve straight away with lime wedges for squeezing over.

Recipe notes

Tips

  • For neat cups, choose the smaller inner lettuce leaves and double them up if any tear.
  • If you are serving vulnerable groups, make sure the chicken is cooked until piping hot all the way through with no pink remaining.

Substitutions

  • Replace honey with maple syrup for a slightly deeper sweetness.
  • Replace romaine lettuce with butterhead lettuce for softer, more pliable cups.

Storage

  • Refrigerate up to 3 days
  • Store the chicken filling and lettuce separately in the fridge. Reheat the filling in a frying pan over medium heat with a small splash of water until piping hot, then spoon into fresh lettuce leaves; add spring onions, sesame and lime just before serving.
