Saganaki Flambé (Pan-Fried Cheese with Brandy and Lemon)
Why this recipe works
- Crisp outside, molten centre: A light flour coating helps the cheese form a golden crust while the inside softens.
- Sharp, bright finish: Fresh lemon cuts through the salty richness of the fried cheese.
- Fast to cook: The cheese needs only a brief fry on each side, making this a true last-minute appetiser.

Timing notes
- Serve immediately: Saganaki is best as soon as the flames subside and the lemon is added, while the crust is crisp and the centre is still soft.
- Have everything ready first: The cooking is very quick, so prepare the lemon, brandy and serving area before the cheese goes into the pan.
Common mistakes
- Flambé safely: Reduce the heat before adding brandy, keep a lid nearby, and never pour alcohol directly from the bottle into a hot pan.
- Shake off excess flour: Too much flour can scorch in the oil and give the cheese a bitter edge.
Ingredient swaps
- Alternative cheese: Halloumi can replace kefalotyri for a milder version with a slightly firmer, less sharp finish.
- Skip the flambé: For an alcohol-free version, omit the brandy and finish the fried cheese with lemon juice and black pepper.
Authenticity notes
- What saganaki means: Saganaki refers to the small pan used for Greek fried cheese dishes, which are typically served hot as a shared meze.
- About the flambé: The brandy flame is a dramatic restaurant-style finish; the essential character of the dish is the crisp, salty fried cheese and lemon.

Instructions
- Pat the kefalotyri dry, then cut into 2 thick slices. Put the plain flour and black pepper on a plate and coat the cheese on all sides, shaking off any excess. Cut the lemon in half and have it ready for squeezing.
- Heat the extra virgin olive oil in a frying pan over medium-high heat until shimmering. Add the cheese and fry for 1 to 2 minutes per side until deeply golden and crisp at the edges. Use tongs to turn it carefully so the coating stays intact.
- Reduce the heat to medium and pour the brandy around the cheese. Carefully tilt the pan slightly towards the flame to ignite, or use a long match, and let the flames burn out naturally. Once the flames subside, squeeze over half the lemon and serve immediately with the remaining lemon for extra juice.

Tips
- For the best crust, make sure the cheese is very dry before flouring, and shake off excess flour so it does not burn in the pan.
- Flambé safely: keep a lid nearby to smother the flame if needed, and never pour brandy straight from the bottle into a hot pan.
Substitutions
- Replace Brandy with dry white wine for a gentler flambé and a lighter finish.
- Replace Kefalotyri cheese with Halloumi cheese for a milder, less sharp saganaki.
Storage
- Refrigerate up to 1 days
- Saganaki is best eaten straight away. If you have leftovers, cool, cover and refrigerate, then reheat in a dry frying pan over medium heat for 1 to 2 minutes per side until hot and crisp again.
