Latin Quinoa Soup
Why this recipe works
- Simple one-pot method: The vegetables, quinoa, tomatoes and stock cook together in one pot, keeping the workflow straightforward and the washing-up minimal.
- Fresh finish: Lime juice added at the end sharpens the tomato base and keeps the beans and quinoa from tasting too heavy.
- Good for storing: The soup keeps well in the fridge or freezer, and a little extra stock restores the texture if it thickens after chilling.

Ingredient notes
- Rinse the quinoa well: Rinsing removes the natural coating that can make quinoa taste slightly bitter, giving the soup a cleaner flavour.
- Add citrus at the end: Stir in the lime juice after simmering so the flavour stays bright rather than becoming muted in the pot.
- Use fresh herbs for the finish: Fresh coriander brings a lighter, greener flavour than dried herbs here; parsley is a gentler alternative if preferred.
Texture tips
- For a thicker soup: Let the quinoa simmer until tender and allow the soup to stand briefly before serving; it will naturally gain body.
- For a looser consistency: Add a little more vegetable stock when reheating or just before serving if the quinoa has absorbed too much liquid.
- Keep the simmer gentle: A steady, low simmer helps the quinoa stay intact and reduces the risk of tomatoes catching on the base of the pot.
Make-ahead tips
- Make ahead for easy meals: Cool the soup completely, then refrigerate in a sealed container for up to 3 days.
- Freezer-friendly: Freeze after cooking for up to 3 months, then defrost overnight in the fridge before reheating.
- Reheat gently: Warm on the hob until piping hot throughout, adding a splash of stock if the soup has thickened in storage.

Ingredients
Instructions
- Finely chop the onion, dice the red pepper, and finely chop the garlic. Rinse the quinoa in a sieve under cold water until the water runs clearer. Finely chop the coriander and set it aside for serving.
- Put a large pot over medium heat and add the onion and red pepper with a small splash of vegetable stock to stop them catching. Cook for 6 to 8 minutes, stirring, until softened. Stir in the garlic and ground cumin and cook for 1 minute until fragrant.
- Add the quinoa, canned chopped tomatoes, and the remaining vegetable stock. Bring to the boil, then reduce to a gentle simmer. Cook for 12 to 15 minutes, stirring occasionally, until the quinoa is tender.
- Stir in the black beans and sweet corn and simmer for 5 minutes, until everything is hot through. Squeeze in the lime juice, then taste and add a little more lime if you like it brighter. Ladle into bowls and finish with the fresh coriander.
