Hummus Lahmeh (Hummus with Spiced Minced Lamb)
Why this recipe works
- Smooth hummus base: Blending the chickpeas while warm helps create a lighter, creamier texture with the tahini, lemon and olive oil.
- Warm spiced topping: Cumin, cinnamon and paprika give the lamb a savoury depth that stands up well against the mellow hummus.
- Creamy and crisp: Toasted pine nuts add crunch and richness, balancing the soft hummus and tender minced lamb.

Timing notes
- Plan for soaking: Dried chickpeas need 8 to 12 hours of soaking before cooking, so start them the night before if serving the dish the next day.
- Serve the lamb warm: The contrast is best when the spiced lamb is still warm and the hummus is cool or room temperature.
Texture tips
- For smoother hummus: Blend thoroughly and add the reserved chickpea cooking water gradually until the hummus loosens to a soft, creamy consistency.
- Avoid grainy chickpeas: Cook the chickpeas until they crush easily between your fingers; undercooked chickpeas will not blend as smoothly.
Ingredient notes
- Use good tahini: A smooth, well-stirred tahini gives the hummus a cleaner sesame flavour and silkier finish.
- Choose lamb for depth: Minced lamb brings a distinct savoury richness, while minced beef gives a milder topping if preferred.
- Watch the pine nuts: Pine nuts brown quickly, so toast them gently and keep them moving once they start to colour.
Make-ahead tips
- Store separately: Keep the hummus and lamb in separate airtight containers so the topping can be reheated without warming the hummus.
- Reheat gently: Warm the lamb in a frying pan with a splash of water until piping hot, then spoon it over the hummus just before serving.
- Best assembled fresh: Assemble just before serving so the pine nuts stay crisp and the warm lamb keeps its contrast with the hummus.

Instructions
- Put the chickpeas in a large pot, cover with plenty of cold water, and soak for 8 to 12 hours. Drain well, then return to the pot and cover with fresh water by at least 5 cm. Bring to the boil, then simmer for 35 to 45 minutes until very tender and easily crushed between your fingers.
- Drain the chickpeas, reserving 200 ml of the cooking water. Squeeze the lemon and set the juice aside. Peel the garlic cloves.
- In a food processor, blend the tahini with the lemon juice, garlic, fine sea salt, and black pepper until smooth. Add the warm chickpeas and blend, drizzling in the extra virgin olive oil. Add a little reserved cooking water as needed and blend until very creamy, scraping down the bowl as you go.
- Finely chop the yellow onion. Warm 1 tbsp of the extra virgin olive oil in a large frying pan over medium heat, then cook the onion for 6 to 8 minutes until soft and lightly golden. Add the minced lamb and cook for 6 to 8 minutes, breaking it up, until browned and cooked through.
- Stir in the ground cumin, ground cinnamon, and ground paprika, and cook for 1 minute until fragrant. Season with a pinch more fine sea salt and black pepper if needed. Keep warm over low heat while you plate up.
- In a small pan, warm the remaining extra virgin olive oil over medium-low heat and toast the pine nuts for 2 to 3 minutes, stirring, until golden. Spoon the hummus onto a serving plate and make a shallow well in the centre. Pile the warm spiced lamb on top and finish with the toasted pine nuts and their oil.
Recipe notes
Tips
- For the smoothest hummus, blend while the chickpeas are still warm and add the reserved cooking water a splash at a time until the texture is light and creamy.
- Toast the pine nuts over medium-low heat and stir constantly; they colour quickly once they start to turn golden.
- Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, ensure the lamb is cooked until piping hot throughout.
Substitutions
- Replace minced lamb with minced beef for a milder, less gamey topping.
- Replace ground paprika with smoked paprika for a deeper, smokier finish.
- Replace lemon with lime for a sharper, more aromatic citrus note.
Storage
- Refrigerate up to 3 days
- Store the hummus and lamb separately in airtight containers. Reheat the lamb in a frying pan over medium heat with a splash of water until piping hot, then spoon over the hummus just before serving.
