Sautéed Mussels with Herbs
Why this recipe works
- Fast cooking: Mussels steam open in just a few minutes, keeping the flesh plump and tender.
- Naturally flavourful broth: Shallot, garlic, wine, butter and the mussels’ own juices create a savoury broth without needing stock.
- Bright finish: Dry white wine and lemon cut through the butter and lift the briny sweetness of the mussels.

Ingredient notes
- Choose live mussels: Use fresh mussels with intact shells; discard any cracked mussels or any that stay open after being tapped.
- Use a dry white wine: A crisp, dry wine keeps the broth light and savoury; avoid sweet wines, which can make the pan juices taste unbalanced.
- Clean just before cooking: Scrub and debeard the mussels shortly before they go into the pot so they stay fresh and cook evenly.
Timing notes
- Most of the work is preparation: Cleaning the mussels takes longer than cooking them; once the wine is simmering, the steaming stage is very quick.
- Serve immediately: Mussels are best served as soon as they open, while the broth is hot and the flesh is still tender.
Common mistakes
- Cooking too long: Remove the pot from the heat once the mussels have opened; prolonged cooking can make them tough.
- Using too gentle a simmer: Keep the heat lively after adding the mussels so they steam quickly rather than sitting in lukewarm liquid.
- Ignoring unopened shells: Discard any mussels that remain closed after cooking, especially when serving vulnerable diners.
Ingredient swaps
- Without wine: Use a splash of water with extra lemon for acidity; the broth will be lighter but still briny and fresh.
- Change the herbs: Fresh chives can replace parsley for a softer, onion-like finish.

Instructions
- Rinse the mussels in a colander under cold running water, scrubbing the shells and pulling off any beards. Discard any that are cracked or that do not close when tapped. Peel and finely slice the shallots, and finely slice the garlic.
- Set a large pot over medium heat and melt the butter. Add the shallots and cook for 2 to 3 minutes until softened but not coloured, then add the garlic and peppercorns and cook for 30 seconds until fragrant.
- Pour in the white wine and bring to a lively simmer. Tip in the mussels, cover with a lid, and steam for 4 to 6 minutes, shaking the pot once or twice, until the shells have opened.
- Remove from the heat and discard any mussels that have not opened. Finely chop the parsley and stir it through the broth. Cut the lemon into wedges and squeeze a little over the mussels to taste, then serve straight from the pot with the herby broth.
Recipe notes
Tips
- Keep the heat fairly high once the mussels go in so they steam quickly and stay plump, and shake the pot to help them open evenly.
- If you are serving anyone who is pregnant, elderly, or immunocompromised, make sure every mussel is fully opened and piping hot before serving.
Substitutions
- Replace Fresh parsley with Fresh chives for a milder, oniony finish.
- Replace Dry White Wine with a slightly larger squeeze of Lemon and a splash of Water for a non-alcoholic version.
Storage
- Refrigerate up to 1 days
- Best eaten immediately. If you have leftovers, remove the mussels from their shells and refrigerate in the broth; reheat gently in a saucepan over low heat just until piping hot, as overcooking makes them tough.
