Saint-Jacques à la Crème (Scallops in White Wine and Cream Sauce)
Why this recipe works
- Fast cooking: Scallops need only a short sear, making this a polished starter that can be ready in less than half an hour.
- Layered sauce: Softened shallot, garlic, reduced white wine and double cream build a sauce that is savoury, smooth and aromatic.
- Balanced richness: Lemon juice added at the end lifts the cream sauce without dulling the delicate sweetness of the scallops.

Timing notes
- Serve straight away: The scallops are best returned to the sauce briefly and served immediately; prolonged holding can make them firm and tighten the cream sauce.
- Prepare before searing: Have the shallot, garlic, parsley and lemon ready before the scallops go into the pan, as the cooking moves quickly once the heat is raised.
Texture tips
- Encourage browning: Pat the scallops very dry and cook them in a single layer so they sear rather than steam.
- Keep scallops tender: Sear until just turning opaque at the edges, then warm them through only briefly in the finished sauce.
- Protect the cream sauce: Once the double cream is added, keep the heat gentle and whisk now and then; a hard boil can make the sauce split.
Ingredient notes
- Choose large scallops: Large scallops are easier to brown on the outside while keeping the centre tender; remove the roe if you prefer a cleaner presentation.
- Use dry white wine: A crisp dry white wine keeps the sauce balanced, while sweeter wines can make the cream taste heavy.
- Add lemon off the heat: Stir in the lemon juice after removing the pan from the heat, then taste and adjust so the acidity lifts the sauce without dominating it.
Serving ideas
- What to serve with it: Crusty bread, steamed potatoes or plain rice work well for catching the creamy white wine sauce.
- Fresh finish: Finish with parsley or chives and a little lemon zest for a clean, aromatic contrast.
- Wine pairing: A crisp dry white such as Muscadet, Chablis-style Chardonnay or Sauvignon Blanc suits the creamy seafood sauce.

Ingredients
Instructions
- Pat the scallops very dry with kitchen paper. Finely chop the shallots, crush the garlic, and chop the parsley. Zest the lemon, then squeeze the juice and set both aside.
- Melt half the butter in a large frying pan over a medium heat. Add the shallots with a pinch of the salt and cook for 2 to 3 minutes until softened but not coloured, then add the garlic for 30 seconds until fragrant. Tip the mixture into a bowl and keep the pan on the hob.
- Increase the heat to medium-high and add the remaining butter. Season the scallops lightly with the remaining salt and the black pepper, then sear in a single layer for 60 to 90 seconds per side until lightly golden and just turning opaque at the edges. Transfer to a warm plate.
- Pour the dry white wine into the pan and scrape up any browned bits. Simmer for 2 to 3 minutes until reduced by about half. Stir in the softened shallots and garlic.
- Lower the heat to medium-low and add the double cream and lemon zest. Simmer gently for 3 to 5 minutes, whisking now and then, until the sauce is silky and coats the back of a spoon. Do not let it boil hard.
- Return the scallops to the pan and warm through for 30 to 60 seconds. Take off the heat, stir in the lemon juice and most of the parsley, then taste and adjust seasoning if needed. Serve hot, spooning the sauce over and finishing with the remaining parsley.
Recipe notes
Tips
- Dry scallops sear better: if they are wet, blot again just before they go into the pan so they brown rather than steam.
- Keep the sauce at a gentle simmer after adding the double cream; a hard boil can split it and dull the flavour.
- If serving vulnerable groups, use scallops that are very fresh and cook them until fully opaque throughout.
Substitutions
- Replace Dry White Wine with Dry Sherry for a slightly nuttier, more rounded sauce.
- Replace Fresh parsley with Fresh chives for a milder, more delicate finish.
Storage
- Refrigerate up to 1 days
- Best eaten straight away. If you have leftovers, cool quickly and refrigerate; reheat gently in a frying pan over a low heat until piping hot, adding a small splash of water if the sauce tightens.
