Coquilles Saint-Jacques Gratinées (Scallops au Gratin)
Why this recipe works
- Layered savoury flavour: Shallot, mushrooms, dry white wine, cream and lemon build a sauce that is rich, savoury and gently bright.
- Smooth gratin sauce: A little flour thickens the wine and cream into a sauce that coats the scallops without becoming heavy.
- Golden topping: Breadcrumbs and Gruyère brown quickly under the grill, adding crispness and nutty flavour to the creamy base.

Timing notes
- Prep before cooking: Have the shallot, mushrooms, cheese, parsley and lemon ready before you start; the sauce and scallops move quickly once the pan is hot.
- Serve immediately: The gratin is best served as soon as the topping is golden, while the sauce is bubbling and the scallops are still tender.
- Best on the day: Scallops firm up when reheated, so this dish is at its best freshly baked rather than made far in advance.
Ingredient notes
- Choose good scallops: Use plump scallops and pat them very dry before searing so they brown quickly instead of releasing excess moisture.
- Use a dry white wine: A crisp dry white wine keeps the sauce savoury and balanced; avoid anything noticeably sweet.
- Balance with lemon: Add lemon juice gradually at the end of the sauce-making stage to brighten the cream without overwhelming the scallops.
Authenticity notes
- French gratin style: The gratinée style is defined by seafood in a creamy wine sauce finished with a browned breadcrumb and cheese topping.
- Individual or shared gratin: Coquilles Saint-Jacques are often presented in scallop shells or small dishes, but a single baking dish gives the same bubbling gratin finish.
- Gruyère finish: Gruyère brings a nutty, melting quality that suits the cream sauce; Parmesan gives a sharper, saltier variation.
Common mistakes
- Overcooking the scallops: Sear the scallops briefly and let the oven finish them; too long in the pan can make them tough before the gratin is even baked.
- Boiling the cream sauce: Keep the sauce at a gentle simmer after adding the double cream so it stays smooth and does not split.
- Wet scallops: Moist scallops steam instead of searing, which can thin the sauce and soften the topping.

Ingredients
Instructions
- Heat the oven to 200°C (390°F). Finely chop the shallots, slice the mushrooms, grate the gruyère, and finely chop the parsley; zest the lemon, then cut it in half.
- Melt 30 g of the butter in a large frying pan over a medium heat. Add the shallots and mushrooms and cook for 6 to 8 minutes until softened and any liquid has evaporated.
- Sprinkle in the flour and cook, stirring, for 1 minute. Pour in the wine and simmer for 3 to 4 minutes until reduced by about half, then stir in the cream and simmer gently for 2 to 3 minutes until lightly thickened.
- Stir in the lemon zest and squeeze in a little lemon juice to brighten the sauce. Tip the sauce into a baking dish and keep it warm while you cook the scallops.
- Wipe out the pan, then melt the remaining 30 g butter over a medium-high heat. Pat the scallops dry, then sear for 45 to 60 seconds per side until lightly golden but still translucent in the centre.
- Nestle the scallops into the warm sauce. Mix the breadcrumbs with the grated gruyère and scatter over the top, then bake for 8 minutes until bubbling at the edges.
- Switch to the grill and cook for 2 to 4 minutes until the topping is golden. Finish with the parsley and serve straight away with extra lemon juice at the table if you like.
Recipe notes
Tips
- Dry the scallops well before searing so they brown quickly rather than steaming.
- Keep the sauce at a gentle simmer after adding the double cream so it stays smooth and does not split.
- If serving anyone who is pregnant, elderly, or immunocompromised, make sure the scallops are cooked through and piping hot.
Substitutions
- Replace Dry White Wine with the same amount of water plus a squeeze of Lemon for acidity.
- Replace Gruyère cheese with Parmesan for a sharper, saltier gratin.
- Replace Button mushrooms with sliced Oyster mushrooms for a slightly more delicate texture.
Storage
- Refrigerate up to 1 days
- Best eaten straight away. If you have leftovers, cool quickly and refrigerate; reheat in a 200°C (390°F) oven until piping hot, noting the scallops may become firmer.
