Karniyarik (Aubergine Stuffed with Minced Beef)
Why this recipe works
- Savoury depth: Slowly softened onion, browned beef, garlic, tomato and warm spices create a rich filling without needing a long braise.
- Silky aubergine: Pre-baking the split aubergines softens the flesh enough to form a well, giving the finished dish its characteristic tender texture.
- Balanced serving style: Rice catches the tomatoey juices, while plain yoghurt adds a cool contrast to the rich beef and olive oil.

Authenticity notes
- Turkish home-style dish: Karniyarik is usually served as a generous main dish rather than a small side, with the aubergine acting as both vessel and key ingredient.
- Lamb variation: Minced lamb is a common alternative to beef and gives the filling a richer, more pronounced flavour.
- Classic accompaniments: Steamed rice and plain yoghurt are natural pairings because they absorb the juices and temper the richness.
Texture tips
- Soften the aubergine properly: The first bake is important: the flesh should press down easily before stuffing, otherwise the finished aubergine may stay firm.
- Keep the filling spoonable: Simmer the tomato and beef mixture until it is thick enough to mound, so it sits neatly inside the aubergines.
- Add water around, not over: Pour the water into the baking dish around the aubergines rather than over the filling to keep the topping concentrated.
Make-ahead tips
- Prepare ahead: The stuffed aubergines can be assembled earlier in the day, covered and refrigerated, then baked when needed.
- Reheat gently: Reheat covered in a 180°C (355°F) oven until piping hot, uncovering near the end if you want the tops to regain a little colour.
- Freezer-friendly portions: Cool completely before freezing in portions, then defrost overnight in the fridge before reheating.

Ingredients
Instructions
- Heat the oven to 200°C (390°F). Split the aubergines lengthways, keeping the stems on, then score the flesh in a criss-cross without cutting through the skin. Sprinkle with 1 tsp of the fine sea salt and set aside while you start the filling.
- Warm 2 tbsp of the extra virgin olive oil in a large frying pan over medium heat. Finely chop the yellow onion and cook for 8 to 10 minutes until soft and lightly golden. Crush in the garlic and cook for 1 minute until fragrant.
- Add the minced beef and cook for 6 to 8 minutes, breaking it up, until browned and any liquid has evaporated. Stir in the ground cumin, sweet paprika, black pepper and the remaining 1 tsp fine sea salt. Cook for 30 seconds to toast the spices.
- Grate 3 tomatoes and add them to the pan, then simmer for 8 to 10 minutes until thick and spoonable. Taste and adjust seasoning if needed. Take off the heat.
- Brush the cut sides of the aubergines with 2 tbsp of the extra virgin olive oil. Arrange them cut-side up in a baking dish and bake for 20 minutes until the flesh has softened and can be pressed down easily. Remove from the oven and keep the oven on.
- Use a spoon to gently press the softened aubergine flesh down the centre to make a well, without tearing the skin. Spoon the beef mixture into the aubergines, mounding it slightly. Slice the remaining 2 tomatoes and lay a slice or two on top of each.
- Drizzle the remaining 1 tbsp extra virgin olive oil over the tops. Add 200 ml water to the baking dish around the aubergines, then bake for 18 to 20 minutes until the aubergines are very tender and the tops are lightly browned. Rest for 5 minutes before serving.

Serving suggestions
This recipe pairs well with:
Tips
- If the aubergines are very large, extend the first bake by 5 to 10 minutes so the flesh is properly soft before stuffing.
- For a neater finish, let the filling simmer until it is thick enough to hold its shape on a spoon before stuffing.
- Serve with rice and yoghurt as traditional accompaniments.
Substitutions
- Replace the minced beef with minced lamb for a richer, more traditional-style filling.
- Replace the extra virgin olive oil with light olive oil if you prefer a milder olive flavour.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat in a 180°C (355°F) oven, covered, for 15 to 20 minutes until piping hot. Freeze portions for up to 2 months and defrost overnight in the fridge before reheating.
