Caldereta de Cordero Extremeña (Extremaduran Lamb Stew)
Why this recipe works
- Deep savoury base: Softened onion, garlic, browned lamb, wine and bay build a rounded broth without needing many ingredients.
- Lifted finish: Sherry vinegar is added at the end, sharpening the stew just enough to balance the richness of the lamb.
- Gentle simmering: Cooking the lamb slowly in a covered pot helps it become tender while keeping the broth full-bodied.

Authenticity notes
- Extremaduran character: The combination of lamb, garlic, bay, wine and smoked paprika gives the stew its recognisably Spanish, regional feel.
- Rustic serving style: This is a generous, broth-led stew designed to be served hot as a main course rather than reduced to a thick sauce.
Timing notes
- Mostly hands-off: The active work is mainly chopping, softening the aromatics and browning the lamb; the rest is a low, steady simmer.
- Let it settle: A short rest off the heat before serving helps the broth settle and slightly thicken.
Common mistakes
- Do not scorch the paprika: Stir the smoked paprika in off the heat before adding the wine, as paprika can turn bitter if it catches on the base of the pot.
- Avoid a hard boil: Keep the stew at a gentle simmer so the lamb turns tender rather than tight or tough.
Make-ahead tips
- Good for making ahead: Like many lamb stews, the flavour settles well after chilling, making it a useful make-ahead dinner.
- Reheat gently: Warm slowly in a saucepan over a low heat until piping hot, adding a little stock if the broth has thickened too much.
- Freezer-friendly: Cool completely before freezing in a sealed container, then defrost safely before reheating.

Ingredients
Instructions
- Heat the olive oil in a Dutch oven over a medium heat. Finely chop the onion and slice the garlic.
- Add the onion with a pinch of salt and cook for 8 to 10 minutes, stirring, until softened and lightly golden. Stir in the garlic and cook for 1 minute until fragrant.
- Add the lamb and turn the heat up to medium-high. Cook for 6 to 8 minutes, stirring occasionally, until the lamb is no longer pink on the outside and any liquid has mostly evaporated.
- Take the pot off the heat and stir in the smoked paprika so it does not catch. Pour in the wine and return to the heat, scraping up any browned bits from the base.
- Add the chicken stock and bay leaves, then bring to a gentle simmer. Cover and cook on a low heat for 60 minutes, stirring once or twice, until the lamb is tender.
- Uncover and simmer for 10 to 12 minutes to slightly reduce the broth. Stir in the sherry vinegar, then taste and adjust seasoning if needed.
- Finely chop the parsley and stir most of it through the stew. Serve hot, scattered with the remaining parsley.
Recipe notes
Tips
- Keep the stew at a gentle simmer rather than a rapid boil so the lamb turns tender instead of tough.
- If the stew reduces too quickly, add a splash more chicken stock to keep the lamb just covered.
- For best flavour, let the stew stand off the heat for 10 minutes before serving so the broth settles and thickens slightly.
Substitutions
- Replace Dry White Wine with a little extra Chicken stock for an alcohol-free version.
- Replace Sherry vinegar with red-wine-vinegar for a similar sharpness.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat gently in a saucepan over a low heat until piping hot, adding a splash of Chicken stock if needed to loosen.
