Cordero Chilindrón (Spanish Lamb with Peppers and Tomatoes)
Why this recipe works
- Deep savoury base: Browning the lamb first creates caramelised flavour that enriches the sauce once the wine is added.
- Classic chilindrón flavour: Peppers, tomato, garlic and sweet paprika create the recognisable sauce that defines this Spanish stew style.
- Tender, sauce-coated lamb: A long, gentle simmer softens the meat while the sauce thickens around the lamb and vegetables.

Ingredient notes
- Use ripe tomatoes: Ripe tomatoes give the sauce natural sweetness and body; less ripe tomatoes may need a little longer to reduce.
- Choose sweet paprika: Sweet paprika keeps the stew rounded and mild. Smoked paprika can be used for a deeper, smokier finish.
- Dry white wine works best: A dry white wine adds acidity and lift without making the sauce taste sweet.
Common mistakes
- Do not burn the paprika: Paprika can turn bitter quickly, so stir it in briefly before adding the wine and tomato.
- Avoid a hard boil: Keep the stew at a gentle simmer so the lamb becomes tender rather than tightening and drying out.
- Reduce the sauce at the end: Removing the lid near the end helps the sauce thicken and cling to the meat instead of staying thin.
Make-ahead tips
- Good made ahead: The stew keeps well and the flavours deepen after resting overnight in the fridge.
- Reheat gently: Warm slowly in a saucepan with a little water if needed, stirring occasionally until piping hot.
- Freezer-friendly: Freeze after cooking once completely cool, then defrost overnight in the fridge before reheating.
Serving ideas
- Serve with bread: Crusty bread is ideal for scooping up the pepper and tomato sauce.
- Add potatoes or rice: Boiled potatoes, roast potatoes or plain rice make the stew feel more substantial.

Instructions
- Pat the lamb dry and season with the fine sea salt and black pepper. Peel and finely chop the onion, deseed and slice the red peppers, and peel and thinly slice the garlic. Roughly grate the tomatoes on a box grater into a bowl, discarding the skins.
- Heat the olive oil in a Dutch oven over medium-high heat. Brown the lamb in batches for 6 to 8 minutes total, turning until well coloured, then transfer to a plate. Lower the heat to medium if the pot starts to catch.
- Add the onion and red peppers to the pot and cook over medium heat for 8 to 10 minutes, stirring, until softened and lightly golden. Stir in the garlic and cook for 1 minute until fragrant. Sprinkle in the sweet paprika and stir for 20 seconds so it blooms without burning.
- Pour in the dry white wine and scrape up any browned bits from the base of the pot. Let it bubble for 2 to 3 minutes to reduce slightly. Stir in the grated tomatoes, bay leaves and water, then return the lamb and any juices to the pot.
- Bring to a gentle simmer, then cover and cook on low for 70 to 80 minutes, stirring occasionally, until the lamb is tender. Remove the lid for the last 10 to 15 minutes to thicken the sauce so it coats the meat and vegetables. Taste and adjust seasoning with a little more fine sea salt and black pepper if needed.
Recipe notes
Tips
- For the best flavour, take time to brown the lamb well; the caramelised bits on the base of the pot enrich the sauce once you add the wine.
- Keep the stew at a gentle simmer rather than a rapid boil so the lamb turns meltingly tender and the sauce reduces without splitting.
- If serving vulnerable groups, ensure the lamb is cooked until piping hot throughout and the sauce is bubbling before serving.
Substitutions
- Replace Dry White Wine with water for an alcohol-free version; add it in the same amount and simmer a little longer to concentrate the sauce.
- Replace Sweet paprika with smoked paprika for a deeper, smoky finish.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan over low heat with a splash of water until piping hot, stirring occasionally. Freeze for up to 3 months; defrost overnight in the fridge before reheating.
