Venison Stew with Juniper and Red Wine
Why this recipe works
- Deep savoury base: Browning the mushrooms, onions, and venison before adding liquid builds depth in the finished gravy.
- Gentle braising suits venison: A low, steady simmer gives lean game meat time to tenderise without becoming tight or dry.
- Juniper balances the richness: Crushed juniper and rosemary add piney, aromatic notes that work naturally with venison and red wine.

Ingredient notes
- Choose firm mushrooms: Firm cremini mushrooms hold their shape during the long simmer and add a deeper savoury flavour than very mild mushrooms.
- Use a dry red wine: A dry red wine gives the sauce structure and depth; avoid sweet wines, which can make the gravy taste unbalanced.
- Crush the juniper: Lightly crushing the berries helps their flavour disperse through the sauce without leaving overly sharp bites.
Common mistakes
- Do not boil hard: Keep the stew at a very gentle simmer once the stock is added; aggressive boiling can make lean venison dry and firm.
- Reduce at the end: If the gravy is thinner than you like, uncover the casserole and simmer briefly until it reaches the right consistency.
Make-ahead tips
- Excellent made ahead: The stew keeps well in the fridge and often tastes fuller after resting, as the wine, herbs, and juniper settle into the sauce.
- Freeze once cooled: Cool completely before freezing in a sealed container. Defrost overnight in the fridge before reheating gently.
- Reheat gently: Warm on the hob until piping hot throughout, adding a little beef stock if the gravy has thickened too much.
Serving ideas
- Serve with mash: Creamy mashed potatoes are ideal for catching the red wine gravy.
- Add winter vegetables: Buttered greens, roasted carrots, or parsnips work well alongside the rich, gamey sauce.
- Pair with red wine: A medium- to full-bodied dry red wine echoes the depth of the stew without overwhelming the juniper and rosemary.

Ingredients
Instructions
- Halve and slice the onion. Halve any large mushrooms so they cook evenly.
- Put a large casserole over medium-high heat. Add the onion and mushrooms with a pinch of the salt and cook, stirring, for 6 to 8 minutes until lightly coloured and any liquid has cooked off.
- Add the venison and cook for 5 to 7 minutes, turning, until browned on all sides. Season with the remaining salt and the black pepper.
- Sprinkle over the plain flour and stir for 1 minute so it coats the meat and vegetables. Lightly crush the juniper berries with the back of a spoon, then stir them in with the rosemary.
- Pour in the red wine and bring to a gentle simmer, scraping up any browned bits from the base. Simmer for 5 minutes to reduce slightly.
- Add the beef stock and bring back to a very gentle simmer. Cover and cook on low heat for 1 hour 45 minutes, stirring once or twice, until the venison is tender and the sauce lightly thickened.
- Uncover and simmer for 5 to 10 minutes to thicken to your liking. Remove the rosemary sprigs, taste, and adjust seasoning with a little more salt and pepper if needed.
Recipe notes
Tips
- Keep the stew at a bare simmer; a fast boil can make venison tighten and turn dry.
- For a smoother gravy, crush the juniper berries well before adding so their flavour disperses without harsh bites.
- If serving vulnerable groups, ensure the stew simmers long enough for the venison to be fully cooked and the sauce to be piping hot throughout.
Substitutions
- Replace cremini mushrooms with button mushrooms for a milder flavour.
- Replace fresh rosemary with 1 tsp dried rosemary, added with the juniper berries.
- Replace red wine with beef stock for an alcohol-free version; the flavour will be less complex but still rich.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Freeze for up to 3 months; defrost overnight in the fridge and reheat gently on the hob until piping hot, adding a splash of beef stock if needed.
