Baccalà alla Vicentina (Slow-Cooked Salt Cod)

From the Veneto tradition, Baccalà alla Vicentina is a slow-cooked salt cod dish prized for its gentle, savoury richness rather than bold heat or acidity. The soaked cod is braised until tender in milk, extra-virgin olive oil, softened onion and anchovy, which melt into a mellow sauce that seasons the fish without overwhelming it. Its texture should be soft and flaky, with the sauce spoonable enough to soak into creamy polenta. Finished with parsley for freshness, it is a deeply comforting Italian dinner that rewards patient, low heat and careful seasoning.

Why this recipe works

  • Deep savoury base: Slow-cooked onion, garlic and anchovies create an umami-rich sauce that seasons the cod from the start.
  • Gentle braising: Keeping the heat very low allows the salt cod to soften without breaking apart or turning dry.
  • Built for polenta: The soft polenta absorbs the olive oil, milk and fish juices, making the dish feel complete without extra sides.

Timing notes

  • Plan for soaking: Salt cod needs 24 to 48 hours in cold water before cooking; thicker pieces usually need the longer soak.
  • Mostly hands-off: The active work is brief, but the dish depends on a long, gentle braise to reach the right tenderness.

Authenticity notes

  • Veneto style: Baccalà alla Vicentina is associated with Vicenza and is traditionally served with soft polenta.
  • Shake, don’t stir: Gently shaking the pot helps keep the fish intact while the sauce thickens around it.

Common mistakes

  • Season at the end: The cod and anchovies already bring salt, so taste the sauce before adding any extra.
  • Avoid a hard simmer: A vigorous boil can toughen the cod and break it into small pieces; the surface should barely tremble.

Make-ahead tips

  • Cook ahead if needed: The cod and sauce can be refrigerated for up to 2 days, then reheated gently with a little water until piping hot.
  • Make polenta fresh: Cook the polenta just before serving, as it firms up once chilled.

  1. Rinse the salted cod well, then soak it in plenty of cold water for 24 to 48 hours, changing the water 3 to 4 times. Drain, pat dry, and remove any obvious bones if needed. Cut into large pieces so it stays intact during the long braise.
  2. Thinly slice the onion, finely chop the garlic, and chop the parsley. Roughly chop the anchovy fillets so they melt easily into the sauce. Keep the cod chilled while you prep.
  3. Warm the olive oil in a Dutch oven over low heat, then add the onion with a pinch of the salt and cook for 12 to 15 minutes until very soft but not coloured. Stir in the garlic and anchovies and cook for 1 to 2 minutes until the anchovies dissolve. Add the black pepper.
  4. Lay the cod pieces in the pot in a single layer as much as possible, then pour in the milk. Bring just to a gentle simmer, then turn the heat to very low so the surface barely trembles. Cover and cook for 2 hours, gently shaking the pot now and then rather than stirring, until the fish is tender and flakes easily.
  5. Taste the sauce and add the remaining salt only if needed, bearing in mind the cod and anchovies. Stir in most of the parsley, reserving a little to finish. Keep the pot on the lowest heat while you cook the polenta.
  6. Bring 1 litre of water to a simmer in a saucepan and whisk in the polenta in a steady stream. Cook over low heat, stirring often, for 30 to 40 minutes until thick and soft. Spoon into bowls and top with the baccalà and its sauce, finishing with the reserved parsley.

Recipe notes

Tips

  • Soak the salted cod until it tastes pleasantly seasoned rather than aggressively salty; the exact time depends on thickness, so taste a small piece after 24 hours.
  • Keep the braise at the gentlest simmer and shake the pot instead of stirring to prevent the fish breaking up.
  • If serving anyone who is pregnant, elderly, or immunocompromised, make sure the fish is cooked until piping hot throughout and flakes easily.

Substitutions

  • Replace whole milk with water for a lighter sauce, but keep the heat very low to avoid the fish drying out.
  • Replace fresh flat-leaf parsley with fresh basil for a softer, sweeter herbal finish.

Storage

  • Refrigerate up to 2 days
  • Cool, then refrigerate the cod and sauce in a sealed container for up to 2 days. Reheat gently in a saucepan over low heat with a splash of water until piping hot; cook fresh polenta for serving, as polenta firms up when chilled.
