Cumin Lamb Stir-Fry (Xinjiang-Style Spiced Lamb)

Fragrant cumin, tender lamb and the dry heat of chilli give this Xinjiang-style stir-fry its recognisable character. Thinly sliced lamb is briefly marinated so it sears quickly and stays juicy, while onion and red pepper add sweetness and a little char from the hot wok. The seasoning is savoury rather than saucy, with soy sauce, ginger, garlic and toasted ground cumin coating the meat lightly. Serve it immediately with steamed rice or noodles, when the lamb is still hot and the cumin aroma is at its most vivid.

Why this recipe works

  • Bold cumin aroma: Briefly toasting the cumin in hot oil brings out its nutty, savoury fragrance without dulling the spice.
  • Fast wok cooking: Thin slices of lamb cook in minutes, keeping the stir-fry quick enough for a weeknight dinner.
  • Tender meat, lightly charred vegetables: High heat gives the onion and red pepper a little colour while the lamb stays juicy and tender.

Adjust the heat

  • For less heat: Use less fresh chilli, remove the seeds, or keep the chilli pieces larger so they flavour the oil without making the dish as hot.
  • For more heat: Add extra fresh chilli or include a pinch of dried chilli flakes when the aromatics go into the wok.
  • Keep the cumin in focus: Avoid letting the chilli dominate; the dish should taste warm, savoury and cumin-led rather than simply hot.

Ingredient notes

  • Slice the lamb thinly: Cutting across the grain helps the lamb stay tender during the short, intense stir-fry.
  • Use fragrant cumin: Ground cumin is central to the dish, so use a fresh, aromatic jar rather than one that has been sitting open for a long time.
  • Choose a tender lamb cut: Boneless leg works well when sliced thinly, giving enough flavour without needing a long cooking time.

Common mistakes

  • Overcrowding the wok: If the lamb piles up, it will steam instead of sear. Keep it in a single layer as much as possible.
  • Cooking the lamb too long: Remove the lamb while it is just browned, then finish it briefly at the end so it does not become tough.
  • Burning the cumin: Toast the cumin only briefly in the hot oil; it should smell fragrant, not bitter or scorched.

Serving ideas

  • Serve with rice: Steamed rice absorbs the savoury soy and lamb juices without competing with the cumin.
  • Serve with noodles: Plain wheat noodles make the stir-fry feel more substantial and work well with the aromatic oil.
  • Finish with sesame: Roasted sesame seeds add a final nutty note and a little texture at the table.

  1. Slice the lamb thinly across the grain. In a bowl, mix the Shaoxing wine, cornflour, 1 tbsp of the light soy sauce, the caster sugar and 1 tsp of the ground cumin, then toss with the lamb until evenly coated.
  2. Slice the onion and red pepper into thin strips. Peel and finely grate the ginger, finely chop the garlic, and slice the red chilli pepper.
  3. Heat 1 tbsp of the sunflower oil in a wok over high heat until shimmering. Add the lamb in a single layer and stir-fry for 60 to 90 seconds until just browned but still a touch pink, then tip it out to a plate.
  4. Add the remaining 1 tbsp sunflower oil to the wok, still over high heat. Stir-fry the onion and red pepper for 2 to 3 minutes until just tender and lightly charred at the edges.
  5. Add the ginger, garlic and red chilli pepper and stir-fry for 30 to 45 seconds until fragrant. Sprinkle over the remaining 1 tsp ground cumin and toss for 15 seconds to toast it in the hot oil.
  6. Return the lamb and any juices to the wok, then add the remaining 1 tbsp light soy sauce. Stir-fry for 1 to 2 minutes until the lamb is cooked through and the sauce lightly coats everything; finish with the roasted sesame seeds and serve straight away.

Serving suggestions

This recipe pairs well with:

Steamed rice Noodles

Tips

  • For the best texture, slice the lamb as thinly as you can and keep the wok very hot so it sears quickly rather than stews.
  • Toast the ground cumin briefly in the wok as directed; it should smell nutty and aromatic, not burnt.
  • If serving anyone who is vulnerable, ensure the lamb is cooked through and piping hot before serving.

Substitutions

  • Replace Shaoxing Cooking Wine with dry sherry for a similar aroma.
  • Replace Red chili pepper with a smaller amount of Red chili pepper (remove the seeds) for a milder heat.
  • Replace Roasted sesame seeds with a little extra Ground cumin for a more cumin-forward finish.

Storage

  • Refrigerate up to 2 days
  • Cool quickly, then refrigerate in a sealed container. Reheat in a hot wok with a small splash of water until piping hot; avoid overcooking the lamb.
