Chicken Tinga Tostadas
Why this recipe works
- Layered smoky flavour: Softened onions, garlic, cumin, ripe tomato and chipotle build a savoury sauce with smoke, warmth and gentle acidity.
- Crunchy contrast: Crisp tostada shells balance the saucy shredded chicken, while avocado adds a creamy finish.
- Easy to prepare ahead: The chicken tinga stores and freezes well on its own, so the tostadas can be assembled fresh just before serving.

Adjust the heat
- For a milder tinga: Start with less chipotle sauce and add more only after the chicken has been shredded and mixed back into the sauce.
- For more heat: Stir in extra chipotle sauce as the sauce reduces so the heat is evenly distributed through the shredded chicken.
- Balance at the table: Avocado and lime help soften the smoky heat and keep each tostada tasting fresh rather than heavy.
Make-ahead tips
- Cook the tinga ahead: The chicken mixture can be made in advance and kept refrigerated in a sealed container for up to 3 days.
- Freeze the filling only: Freeze the cooled tinga without the tostada shells or avocado, then defrost overnight in the fridge before reheating.
- Reheat gently: Warm the tinga in a frying pan with a splash of water until piping hot, then assemble the tostadas just before serving.
Texture tips
- Keep the chicken tender: Boneless thighs stay moist and shred easily; keep the simmer gentle rather than boiling hard.
- Reduce until glossy: After shredding the chicken, simmer the sauce uncovered until it thickens enough to coat the meat rather than pooling.
- Control the sauce texture: Mash the tomatoes into the pan for a smoother sauce, or leave them looser for a more rustic finish.
Ingredient notes
- Use ripe tomatoes: Ripe tomatoes break down more readily and give the sauce better body and natural sweetness.
- Choose thighs for shredding: Chicken thighs are well suited to simmering and produce a fuller, more tender tinga than leaner cuts.
- Finish with lime: A squeeze of lime sharpens the sauce and cuts through the richness of the chicken and avocado.

Ingredients
Instructions
- Thinly slice the onion. Finely chop the garlic, and roughly chop the tomatoes.
- Heat the sunflower oil in a large frying pan over medium heat. Add the onion and cook for 6 to 8 minutes until softened and lightly golden.
- Stir in the garlic and ground cumin and cook for 30 seconds until fragrant. Add the tomatoes and chipotle sauce, then cook for 3 to 4 minutes until the tomatoes start to break down.
- Nestle in the chicken thighs and turn them to coat in the sauce. Add 200 ml water, bring to a gentle simmer, then cover and cook for 15 to 18 minutes until the chicken is cooked through and tender.
- Transfer the chicken to a bowl and shred with two forks. Simmer the sauce uncovered for 3 to 5 minutes until slightly thickened, then return the chicken to the pan and stir until saucy.
- Halve the avocado, remove the stone, and slice the flesh. Pile the chicken tinga onto the tostada shells, top with avocado, and squeeze over lime to serve.
Recipe notes
Tips
- For a smoother sauce, mash the tomatoes against the side of the pan as they cook, then simmer until glossy and thick enough to cling to the chicken.
- If serving to children or anyone sensitive to heat, start with 1 tbsp chipotle sauce and add more at the end to taste.
Substitutions
- Replace chicken thighs with chicken breast for a leaner tinga; reduce the simmering time and cook just until the chicken is tender, then shred.
- Replace sunflower oil with olive oil for a fruitier base.
Storage
- Refrigerate up to 3 days
- Cool the chicken tinga quickly and refrigerate in a sealed container. Reheat gently in a frying pan with a splash of water until piping hot, then assemble on tostada shells just before serving. Freeze the tinga only (not the tostadas or avocado) for up to 2 months; defrost overnight in the fridge before reheating.
