Crêpes with Ham, Mushrooms and Béchamel
Why this recipe works
- Savoury depth: Browning the mushrooms first drives off excess moisture and concentrates their earthy flavour before they are folded into the ham and sauce.
- Silky sauce: A classic béchamel gives the filling body while Dijon mustard and nutmeg keep the richness balanced.
- Warm and satisfying: Tender crêpes, creamy sauce and a savoury filling make this feel generous without needing a heavy baked finish.

Timing notes
- Rest the batter: A short rest helps the flour hydrate, giving the crêpes a smoother texture and making the batter easier to spread thinly.
- Serve while hot: The béchamel is at its best just after warming, when it is still loose, glossy and easy to spoon over the folded crêpes.
Texture tips
- For smoother batter: Whisk in the milk gradually rather than all at once, scraping the bowl as you go to prevent dry pockets of flour.
- Keep the sauce gentle: Simmer the béchamel over moderate heat and whisk often so it thickens evenly without catching or turning grainy.
- Warm, don’t brown: Use low heat when reheating the filled crêpes so they heat through without becoming dry or tough at the edges.
Ingredient notes
- Mushroom choice: Cremini mushrooms bring a deeper, more savoury flavour, while button mushrooms give a lighter, milder filling.
- Nutmeg in béchamel: A small pinch of nutmeg is traditional in creamy white sauces and adds warmth without making the sauce taste sweet.
- Check the ham first: Cured ham can vary in saltiness, so season the béchamel lightly at first and adjust only after the filling comes together.
Make-ahead tips
- Store separately: For the best texture, keep cooked crêpes and béchamel in separate airtight containers, then fill and warm them just before serving.
- Reheat gently: Warm the sauce slowly, whisking until smooth, and heat the filled crêpes in a pan over low heat until piping hot.

Instructions
- Make the crêpe batter: whisk the plain flour and a pinch of fine sea salt in a bowl, then whisk in the eggs. Gradually whisk in the whole milk until smooth, then whisk in the melted unsalted butter. Rest the batter for 10 minutes while you prepare the filling.
- Slice the cremini mushrooms and cut the cured ham into thin strips. Heat a frying pan over medium-high heat with the unsalted butter for the filling. Add the mushrooms and cook for 6 to 8 minutes until browned and any liquid has evaporated, then season with black pepper and set aside with the ham.
- Cook the crêpes: wipe the pan clean and set over medium heat. Ladle in a little batter and swirl to coat the base thinly, then cook for about 45 to 60 seconds until the edges lift; flip and cook 20 to 30 seconds more. Repeat to make 4 to 6 crêpes, stacking them as you go.
- Make the béchamel: in a saucepan over medium heat, melt the unsalted butter, then whisk in the plain flour and cook for 1 minute until it smells biscuity. Gradually whisk in the whole milk until smooth, then simmer gently for 3 to 5 minutes, whisking, until thick enough to coat the back of a spoon. Whisk in the Dijon mustard, ground nutmeg and a pinch of fine sea salt, then take off the heat.
- Fill and warm through: stir the mushrooms and ham into about half of the béchamel. Spoon the filling down the centre of each crêpe, fold into quarters, then return to the frying pan over low heat. Warm for 2 to 3 minutes, turning once, until heated through without browning too much.
- Serve the crêpes straight away, spooning over the remaining béchamel while it is still silky. Grind over a little more black pepper if you like. Eat while hot.
Recipe notes
Tips
- For the smoothest batter, whisk the milk in gradually and scrape the sides of the bowl; any small lumps will relax during the 10-minute rest.
- Keep the béchamel at a gentle simmer and whisk often so it thickens without catching on the base of the pan.
- If serving anyone who is pregnant, elderly, or immunocompromised, use eggs that are stamped as suitable for eating raw or lightly cooked, and make sure the crêpes are heated until piping hot.
Substitutions
- Replace cremini mushrooms with button mushrooms for a milder flavour.
- Replace Dijon mustard with whole-grain mustard for a more textured, slightly sharper sauce.
- Replace cured ham with smoked ham for a smokier filling.
Storage
- Refrigerate up to 2 days
- Cool, then refrigerate crêpes and béchamel separately in airtight containers. Reheat the béchamel gently in a saucepan over low heat, whisking until smooth, and warm the filled crêpes in a frying pan over low heat until piping hot.
