Lamb Barbacoa Tacos with Consommé
Why this recipe works
- Slow braising builds tenderness: Lamb shoulder becomes shreddable and deeply seasoned after a long, gentle cook in stock, vinegar, spices and dried chilli.
- Deep savoury broth: The onions, garlic, spices and lamb juices infuse the cooking liquid, which is then strained and reduced into a rich dipping consommé.
- Freshness balances richness: Apple cider vinegar in the braise and lime at the table cut through the lamb’s richness and soften the chilli warmth.

Authenticity notes
- Home-style barbacoa method: Traditional barbacoa is associated with slow, covered cooking; this version adapts that idea to a Dutch oven for reliable tenderness.
- Corn tortillas and consommé: Serving the shredded meat in warm corn tortillas with a bowl of broth keeps the focus on the lamb and its spiced cooking juices.
Adjust the heat
- For a milder version: Reduce the chilli powders slightly and serve plenty of lime wedges; the acidity helps round out the heat.
- For more warmth: Increase the dried chilli element to taste, or add a hotter chilli alongside the guajillo and ancho flavours.
- Keep the heat rounded: The consommé should taste savoury and aromatic rather than harsh, so adjust salt and acidity before adding more chilli.
Ingredient notes
- Use lamb shoulder: Shoulder has enough connective tissue and fat to stay juicy through a long braise and shred cleanly once tender.
- Dried chilli depth: Guajillo and ancho bring warmth, fruitiness and colour rather than sharp heat alone.
- Acidity matters: Apple cider vinegar brightens the braise, while fresh lime added at the table keeps the finished tacos lively.
Make-ahead tips
- Cook ahead: The lamb and consommé can be made in advance and refrigerated separately, which also makes the fat easier to lift from the broth.
- Reheat gently: Warm the lamb with a little consommé over low heat until piping hot, and bring the remaining broth to a gentle simmer rather than a hard boil.
- Freezer-friendly: Freeze the cooled lamb and consommé separately, then defrost overnight in the fridge before reheating.

Instructions
- Heat the oven to 160°C (320°F). Pat the lamb dry and season all over with the fine sea salt.
- Halve and thinly slice the onion. Peel the garlic cloves and lightly crush them with the side of a knife.
- Put the lamb in a dutch oven and scatter over the onion and garlic. Add the guajillo chili powder, ancho chili powder, ground cumin, dried oregano, whole cloves and bay leaves, then pour in the apple cider vinegar and beef stock.
- Bring the pot just to a gentle simmer on the hob, then cover with a lid and transfer to the oven. Cook for 3 hours, turning the lamb once or twice, until very tender and shreddable.
- Lift the lamb onto a board and shred it, discarding any large pieces of fat. Strain the cooking liquid through a sieve into a saucepan, pressing on the onion and garlic to extract flavour, then discard the solids and bay leaves.
- Skim off excess fat from the surface of the strained liquid, then simmer for 8 to 10 minutes until glossy and slightly reduced. Taste and add a pinch more fine sea salt if needed.
- Return the shredded lamb to the dutch oven and ladle in a little of the consommé to keep it juicy. Warm gently over low heat until piping hot.
- Warm the corn tortillas in a dry pan or directly over a low flame, turning, until pliable and lightly toasted. Chop the fresh coriander and cut the limes into wedges.
- Fill each tortilla with lamb and sprinkle with fresh coriander, then squeeze over lime to taste. Serve the remaining consommé in small bowls for dipping.

Serving suggestions
This recipe pairs well with:
Tips
- For a cleaner consommé, let the strained cooking liquid stand for 5 minutes, then skim the fat from the surface before simmering to reduce.
- If serving children or anyone sensitive to heat, offer extra lime at the table; the acidity softens the chilli warmth.
- Make sure the lamb is piping hot before serving, and reheat the consommé to a gentle simmer rather than a hard boil to keep it clear.
Substitutions
- Replace beef stock with chicken stock for a lighter, slightly sweeter consommé.
- Replace apple cider vinegar with white wine vinegar for a sharper, cleaner acidity.
- Replace fresh coriander with fresh flat-leaf parsley if you prefer a milder herb finish.
Storage
- Refrigerate up to 3 days
- Cool the lamb and consommé quickly, then refrigerate separately in sealed containers. Reheat the lamb with a splash of consommé over low heat until piping hot; reheat the consommé in a saucepan to a gentle simmer. Freeze for up to 2 months and defrost overnight in the fridge before reheating.
