Tacos de Carnitas con Salsa Verde (Pork Carnitas Tacos)

Tacos de carnitas centre on one of Mexico’s most recognisable ways to serve slow-cooked pork: tender, richly seasoned meat with crisp, browned edges tucked into warm corn tortillas. The pork shoulder is gently braised with orange, onion, garlic, cumin and oregano until it shreds easily, then fried in its own rendered fat for the signature mix of juicy strands and caramelised pieces. A tomatillo salsa verde brings the sharp, fresh counterpoint, with jalapeño, coriander and lime cutting through the richness. These tacos are best served straight from the pan, when the tortillas are soft and the carnitas still crisp.

Why this recipe works

  • Layered pork flavour: Browning the pork first creates savoury depth, while orange, onion, garlic, cumin and oregano season the braising liquid.
  • Tender and crisp: Slow cooking makes the pork easy to shred, then a final fry in its own fat gives the carnitas their characteristic crisp edges.
  • Bright salsa balance: Tomatillo, lime and coriander cut through the richness of the pork and keep each taco fresh rather than heavy.

Adjust the heat

  • For a milder salsa: Remove the jalapeño seeds before simmering, or use less of the cooked chilli when blending the salsa.
  • For more heat: Blend in more jalapeño to taste, keeping the lime and coriander generous so the salsa stays bright.
  • Keep the heat balanced: Taste the salsa after blending and adjust with lime or salt if the chilli tastes sharp rather than rounded.

Texture tips

  • Crisp in a single layer: Spread the shredded pork evenly in the hot pan and leave it undisturbed at first so the edges can brown properly.
  • Keep the pork moist: Toss the shredded meat with a little reduced cooking liquid before crisping, then add another splash only if it starts to look dry.
  • Serve straight away: Fill the tortillas just before eating so the pork stays crisp and the salsa does not soften the tortillas too quickly.

Make-ahead tips

  • Braise ahead: The pork can be braised and shredded in advance, then crisped in a frying pan just before serving.
  • Store separately: Keep the carnitas and salsa verde in separate containers so the pork reheats well and the salsa stays fresh.
  • Reheat for crisp edges: Warm the pork in a hot frying pan with a little cooking liquid until piping hot, then let the edges brown again before serving.

Ingredient notes

  • Choose pork shoulder: Pork shoulder has the fat and connective tissue needed for tender, juicy carnitas after a long braise.
  • Balance the salsa: Tomatillos vary in sharpness, so taste after blending and adjust with lime or salt until the salsa tastes lively but not harsh.
  • Rinse the tomatillos: After removing the papery husks, rinse away the sticky coating before simmering for a cleaner-tasting salsa.

  1. Cut the pork into large chunks. Peel and quarter the onion, and lightly crush the garlic cloves. Halve the orange and squeeze in the juice, then add the squeezed halves to the pot as well.
  2. Heat the olive oil in a Dutch oven over medium-high heat. Season the pork with the salt, pepper, cumin and oregano, then brown in batches for 6 to 8 minutes total, turning until well coloured. Return all the pork to the pot.
  3. Add the onion, garlic, orange halves and water, scraping up any browned bits. Bring to a simmer, then cover and cook on a very low heat for 2 hours, turning the pork once or twice, until it is pull-apart tender. Uncover for the last 15 minutes to reduce the cooking liquid slightly.
  4. Meanwhile, make the salsa verde: remove any papery husks from the tomatillos and rinse away any stickiness. Simmer the tomatillos and jalapeño in a small saucepan with enough water to cover for 8 to 10 minutes, until the tomatillos turn olive-green and soften. Drain well.
  5. Blend the cooked tomatillos and jalapeño with the fresh coriander and the juice of the lime until bright and spoonable. Taste and add a pinch more salt if needed. Set aside.
  6. Lift the pork out and shred it, discarding the orange halves; keep the cooking liquid in the pot. Skim and reserve 3 tbsp of the fat from the surface of the liquid, then simmer the remaining liquid for 5 to 10 minutes until slightly syrupy. Toss the shredded pork with a few spoonfuls of the reduced liquid to keep it juicy.
  7. Heat a large frying pan over medium-high heat and add the reserved pork fat. Add the shredded pork in an even layer and cook, undisturbed, for 3 to 4 minutes until crisp at the edges, then toss and crisp for 2 to 3 minutes more. Add a splash of the reduced liquid if it looks dry.
  8. Warm the corn tortillas in a dry pan for about 20 to 30 seconds per side until pliable. Fill each tortilla with the carnitas and spoon over the salsa verde. Serve straight away while the pork is still crisp.

Recipe notes

Tips

  • For the best texture, do not overcrowd the pan when crisping the pork; work in batches so it fries rather than steams.
  • If you are serving children or anyone sensitive to heat, remove the jalapeño seeds before simmering for a milder salsa.

Substitutions

  • Replace the jalapeno pepper with 2 tsp smoked paprika for a smoky, non-spicy salsa verde.
  • Replace the orange with 2 limes for a sharper, more citrus-forward braise.

Storage

  • Refrigerate up to 3 days
  • Keep the carnitas and salsa verde in separate airtight containers. Reheat the pork in a hot frying pan with a spoonful of its cooking liquid until piping hot and crisp at the edges; serve the salsa cold or at room temperature.
