Carnitas de Cerdo Estilo Michoacán (Slow-Cooked Pork for Tacos)

In Michoacán-style carnitas, pork shoulder is cooked slowly until it becomes soft enough to pull apart, then finished so the outside catches and crisps. The result is rich, savoury pork with a mix of tender pieces, browned edges and a light citrus lift from orange and lime. Traditionally enjoyed tucked into warm corn tortillas, carnitas are especially good with the cooked onion, fresh coriander and extra lime at the table. Keeping the meat in generous pieces rather than shredding it finely helps preserve that satisfying contrast between succulent interior and crisp roasted edges.

Why this recipe works

  • Tender, slow-cooked pork: A covered oven braise gives pork shoulder time to soften until it pulls apart easily.
  • Crisp browned edges: Uncovering the pot for the final roast reduces the cooking juices to a glossy coating while the pork crisps at the surface.
  • Bright citrus balance: Orange juice and lime cut through the richness of the pork, keeping the tacos savoury but not heavy.

Authenticity notes

  • Michoacán inspiration: Michoacán is strongly associated with carnitas, traditionally slow-cooked until rich, tender and browned. This version uses an oven and Dutch oven for a practical home-cooking approach.
  • Oven-friendly method: Instead of deep cooking the pork in fat, the recipe braises it first, then roasts it uncovered to create the tender-crisp contrast associated with carnitas.

Ingredient notes

  • Choose pork shoulder: Pork shoulder has enough fat and connective tissue to become tender during the long cook without drying out.
  • Finish with lime: Serving lime wedges on the side lets each person sharpen the richness of the pork to taste.
  • Keep the pork in larger pieces: Larger chunks brown better at the end and give a mix of juicy centres and crisp edges.

Common mistakes

  • Letting the pot dry out too early: During the covered braise, keep a little liquid in the base of the pot so the pork stays moist while it becomes tender.
  • Shredding too finely: Avoid breaking the pork into tiny strands before the final roast; larger pieces give better contrast between soft meat and crisp edges.
  • Not enough surface contact: For extra browning, spread the pork out as much as the pot allows before the final uncovered roast.

Make-ahead tips

  • Cook ahead: The carnitas can be cooked in advance, cooled quickly and refrigerated in a sealed container.
  • Re-crisp before serving: Reheat in a 220°C (430°F) oven until piping hot, turning once so the edges regain their crispness.
  • Freezer-friendly: Freeze cooked carnitas, then defrost overnight in the fridge before reheating in the oven.

  1. Heat the oven to 160°C (320°F). Cut the pork into large chunks, about 5 cm, then season all over with the salt, cumin and oregano.
  2. Lightly crush the garlic cloves and cut the onion into thick wedges. Put the pork, garlic and onion into a Dutch oven, then pour over the orange juice and squeeze in the juice of 1 lime.
  3. Cover and cook in the oven for 2 hours, turning the pork once halfway through, until very tender and easily pulled apart. If the pot looks dry at any point, add a small splash of water to keep a little liquid in the base.
  4. Increase the oven to 220°C (430°F). Uncover and roast for 20 to 25 minutes, turning once, until the edges are deeply browned and crisp and the liquid has reduced to a glossy coating.
  5. Finely chop the fresh coriander and cut the remaining lime into wedges. Warm the tortillas in a dry pan or directly over a low flame until pliable, then fill with the carnitas and top with onion from the pot and coriander; serve with lime wedges for squeezing.

Recipe notes

Tips

  • For the best texture, do not shred the pork too finely; keep some larger pieces so you get both tender meat and crisp edges after roasting.
  • If you want extra crispness, spread the pork out in a single layer in the pot for the final roast so more surface area browns.
  • If serving children, keep the lime on the side so everyone can adjust the sharpness to taste.

Substitutions

  • Replace Orange juice with freshly squeezed orange juice for a brighter, less sweet flavour.
  • Replace Fresh coriander with a smaller amount of Fresh coriander if you prefer a lighter herbal finish.

Storage

  • Refrigerate up to 3 days
  • Cool the carnitas quickly, then refrigerate in a sealed container. Reheat in a 220°C (430°F) oven for 10 to 15 minutes, turning once, until piping hot and re-crisped; freeze for up to 2 months and defrost overnight in the fridge before reheating.
