Vegetarian Chiles Rellenos (Poblano Chillies Stuffed with Beans and Cheese)

In vegetarian chiles rellenos, roasted poblano chillies become tender, gently smoky vessels for a rich filling of refried beans and melting cheese. The dish is a well-loved Mexican preparation, usually served warm with a tomato-based sauce that cuts through the savoury filling and light fried coating. Here, the poblanos are peeled after roasting, stuffed until generous but still able to close, then dipped in an airy egg batter and pan-fried until puffed and golden. Bright lime at the table keeps the final plate fresh, making it satisfying enough for dinner while still working well as part of a larger Mexican-style spread.

Why this recipe works

  • Contrasting textures: The soft roasted poblano and molten cheese are balanced by a light, crisp egg batter.
  • Bright tomato sauce: The tomato sauce and lime add acidity, keeping the beans, cheese and fried coating from feeling too heavy.
  • Smoky, savoury depth: Roasting the poblanos first brings out their smoky character before they are stuffed, battered and fried.

Timing notes

  • Steam before peeling: Covering the roasted poblanos after they come out of the oven helps loosen the skins without tearing the flesh.
  • Serve straight away: Chiles rellenos are best eaten hot, while the batter is still crisp and the cheese is melted.
  • Use the sauce time well: The tomato sauce can simmer while the poblanos steam and cool, keeping the workflow efficient.

Texture tips

  • Sauce at the end: Spoon the warm tomato sauce over just before serving, or serve it alongside, so the batter stays crisp for longer.
  • Keep the oil steady: A steady medium heat helps the batter puff and brown without absorbing excess oil.
  • Fold gently: Fold the yolks into the whisked whites lightly so the batter keeps enough air to coat and puff around the chillies.

Ingredient notes

  • Choose sturdy poblanos: Look for broad, intact poblanos with enough space to hold the beans and cheese without splitting.
  • Use a good melting cheese: Queso Oaxaca gives the traditional stretchy texture; mozzarella is the closest easy substitute.
  • Finish with lime: A squeeze of lime sharpens the tomato sauce and balances the richness of the fried batter and cheese.

Make-ahead tips

  • Make the sauce ahead: The tomato sauce can be cooked in advance and reheated gently before serving.
  • Store separately: Keep fried chillies and sauce in separate airtight containers so the coating does not soften too quickly.
  • Reheat in the oven: Reheat the chillies on a baking tray at 200°C (390°F) until piping hot; the coating will soften slightly but hold better than microwaving.

  1. Heat the oven to 230°C (445°F). Put the poblano pepper on a baking tray and roast for 18 to 22 minutes, turning once, until blistered and blackened in patches. Transfer to a bowl, cover, and leave for 10 minutes to steam.
  2. Meanwhile, make the sauce: finely chop the white onion and crush the garlic. Heat 1 tbsp vegetable oil in a saucepan over medium heat, then cook the onion with a pinch of the fine sea salt for 6 to 8 minutes until soft. Add the garlic and cook for 30 seconds until fragrant.
  3. Roughly chop the tomato, add to the pan with the ground cumin, dried oregano, remaining fine sea salt and the black pepper. Simmer for 12 to 15 minutes, stirring occasionally, until the tomatoes break down and the sauce thickens. Keep warm on a low heat.
  4. Peel the poblanos, keeping them as intact as possible, then cut a slit down one side and remove the seeds. Spoon in the refried beans, then tuck in strips of queso Oaxaca so the chillies are well filled but can still close. Set on a plate while you make the batter.
  5. Separate the egg whites and yolks into two bowls. Whisk the whites to soft peaks, then whisk the yolks with a pinch of the fine sea salt and fold into the whites to make a light batter. Keep the batter close to the hob so it stays airy.
  6. Heat 250 ml vegetable oil in a large frying pan over medium heat until a drop of batter sizzles on contact. Dip each stuffed poblano into the batter to coat, then fry for 2 to 3 minutes per side until golden and puffed, working in batches. Transfer to a plate and season lightly with a pinch more fine sea salt if needed.
  7. Serve the chiles hot with the warm tomato sauce spooned over or alongside. Cut the lime into wedges and squeeze over just before eating. Eat straight away while the batter is crisp and the cheese is melting.

Recipe notes

Tips

  • For easier peeling, roast the poblanos until the skins are well blistered, then steam them covered so the skins slip off cleanly.
  • Keep the oil at a steady medium heat: if it is too cool the batter will absorb oil, and if it is too hot the outside will brown before the filling is hot.
  • If serving anyone vulnerable, use eggs with a lion mark (or equivalent) and make sure the batter is cooked through until set and golden.

Substitutions

  • Replace Queso Oaxaca with mozzarella for a similar melt and stretch.
  • Replace White onion with Yellow onion for a slightly sweeter sauce.
  • Replace Dried oregano with Fresh oregano for a brighter herbal note.

Storage

  • Refrigerate up to 2 days
  • Store the fried chillies and tomato sauce separately in airtight containers. Reheat the sauce gently in a saucepan; reheat the chillies on a baking tray at 200°C (390°F) for 10 to 12 minutes until piping hot (they will soften slightly).
