Molletes with Refried Beans and Pico de Gallo
Why this recipe works
- Crisp base: Toasting the bread before adding the beans helps it hold its structure beneath the warm, soft toppings.
- Fresh balance: Lime, tomato and onion in the pico de gallo cut through the richness of the refried beans and melted cheese.
- Fast assembly: Warming the beans, chopping the salsa and melting the cheese are simple steps that keep the recipe comfortably under 30 minutes.

Adjust the heat
- For less heat: Remove the jalapeño seeds and white pith before chopping, or use a smaller amount in the pico de gallo.
- For more heat: Keep the jalapeño seeds in, or add extra chopped chilli to the salsa just before serving.
Texture tips
- Toast before topping: Give the cut sides of the bread a short initial toast so they become lightly golden before the beans and cheese go on.
- Add salsa at the end: Spoon the pico de gallo over the molletes only when serving, or serve it on the side, to keep the bread crisp.
Ingredient notes
- Choose sturdy bread: Bolillo-style rolls are ideal because they have a crusty exterior and enough structure to hold the beans and cheese.
- Prepare Oaxaca cheese for melting: Pulling the cheese into thin strands helps it melt more evenly over the warm beans.
Make-ahead tips
- Store components apart: Keep the pico de gallo separate from the bean and cheese toasts so the bread does not soften in the fridge.
- Reheat before adding salsa: Warm the molletes on a baking tray at 200°C (390°F) until piping hot and the cheese has melted again, then add the pico de gallo.

Instructions
- Heat the oven to 220°C (430°F) and set a baking tray inside to warm. Split the crusty white bread lengthways and brush the cut sides lightly with the vegetable oil.
- Warm the refried beans in a small saucepan over low heat, stirring, until loosened and spreadable. If they seem very thick, add a small splash of water and stir until smooth.
- Dice the tomato and finely dice the white onion. Finely chop the fresh coriander, then squeeze in the lime juice and mix to make a simple pico de gallo.
- Finely chop the jalapeno pepper and stir it into the pico de gallo. Taste and add a little more lime juice if you want it sharper.
- Toast the bread cut-side up on the hot tray for 4 to 5 minutes until lightly golden. Spread the warm refried beans over each half, then top with the queso Oaxaca.
- Return to the oven for 4 to 6 minutes, until the cheese is melted and bubbling at the edges. Serve straight away with the pico de gallo spooned over the top or on the side.
Recipe notes
Tips
- For a cleaner melt, pull the queso Oaxaca into thin strands before sprinkling it over the beans.
- If you prefer a milder topping, remove the jalapeno seeds and white pith before chopping.
- Keep the pico de gallo separate until serving so the bread stays crisp.
Substitutions
- Replace Queso Oaxaca with mozzarella for a similar melt and mild flavour.
- Replace crusty white bread with brioche bread for a softer, richer base.
Storage
- Refrigerate up to 2 days
- Store the pico de gallo and the bean and cheese toasts separately in the fridge. Reheat the molletes on a baking tray at 200°C (390°F) until piping hot and the cheese has re-melted; add the pico de gallo after reheating.
