Devilled Kidneys on Buttered Toast
Why this recipe works
- Fast cooking: Kidneys cook very quickly, making this a proper hot supper in under 30 minutes when the toast and sauce ingredients are prepared first.
- Balanced richness: Mustard, Worcestershire sauce and lemon cut through the butter and cream, keeping the sauce lively rather than heavy.
- Classic devilled flavour: The combination of cayenne, mustard and Worcestershire gives the dish its recognisable devilled heat and savoury depth.

Ingredient notes
- Trim the kidneys well: Remove the tough white core before cooking, or ask the butcher to trim them, so the pieces fry evenly and stay tender.
- Use fresh kidneys: Fresh lamb kidneys should smell clean and mild. Strong or sour aromas are a sign they are past their best.
- Add lemon carefully: Use lemon juice to brighten the finished sauce, adding a little at a time so it sharpens the richness without making the cream taste sour.
Common mistakes
- Overcooking the kidneys: Kidneys become tough if cooked for too long. Fry them just until browned outside and still slightly pink within.
- Boiling the cream: Keep the cream at a gentle simmer once it goes into the pan. A hard boil can make the sauce split or turn grainy.
- Letting the toast sit: Toast and butter the bread just before serving, then spoon over the kidneys while everything is hot.
Serving ideas
- Serve with something green: A simple watercress salad, dressed leaves or lightly cooked greens balance the richness of the creamy sauce.
- Beer pairing: A traditional bitter or pale ale works well with the peppery sauce and savoury Worcestershire notes.
- Finish simply: A final grind of black pepper and a small squeeze of lemon sharpen the dish just before it reaches the table.
Make-ahead tips
- Prepare before heating the pan: Chop the shallot, trim and slice the kidneys, squeeze the lemon and measure the sauce ingredients before cooking begins.
- Best served immediately: The texture is at its best straight from the pan, while the kidneys are tender and the toast is still crisp.
- Reheat gently: If reheating leftovers, warm the kidneys and sauce gently over low heat with a splash of water, then serve on freshly toasted bread.

Ingredients
Instructions
- Finely chop the shallot. Split the lamb kidney in half and cut away any tough white core, then slice into bite-sized pieces. Season with the fine sea salt and black pepper.
- Toast the white bread, then butter it lightly, using about half the butter. Keep the toast warm on plates. Squeeze the lemon and set aside.
- Melt the remaining butter in a frying pan over medium-high heat. Add the shallot and cook for 2 minutes until softened but not browned. Add the kidney pieces and fry for 2 to 3 minutes, tossing, until browned on the outside and still slightly pink within.
- Stir in the dijon mustard, worcestershire sauce and cayenne pepper, coating the kidneys well. Pour in the double cream and simmer gently for 2 to 3 minutes until glossy and lightly thickened; do not let it boil hard. Taste and brighten with a little lemon juice.
- Spoon the devilled kidneys and sauce over the buttered toast. Finish with a final grind of black pepper if you like. Serve straight away while hot.
Recipe notes
Tips
- Have everything prepped before you start cooking; kidneys go from perfect to overcooked quickly.
- Keep the cream at a gentle simmer so it stays smooth and does not split.
Substitutions
- Replace shallot with white onion for a slightly bolder base.
- Replace dijon mustard with whole-grain mustard for a coarser, more rustic sauce.
Storage
- Refrigerate up to 1 days
- Best eaten immediately. If you have leftovers, refrigerate the kidneys and sauce separately from the toast and reheat very gently in a frying pan over low heat with a splash of water until piping hot, then spoon onto freshly toasted white bread.
