Tian de Légumes Provençal (Provençal Baked Vegetable Tian)
Why this recipe works
- Classic layered baking: Arranging the vegetables upright lets them cook evenly while keeping the recognisable tian presentation.
- Simple flavour base: Olive oil, garlic and fresh thyme gently season the vegetables without overpowering their natural sweetness.
- Tender with crisp edges: Slow baking softens the vegetables, while the final breadcrumb topping adds a light golden crunch.

Authenticity notes
- Provençal style: This tian follows the southern French approach of baking seasonal vegetables with olive oil, garlic and herbs rather than using a heavy sauce.
- Rustic presentation: The neatly layered vegetables are traditional in spirit, but the dish should still feel relaxed and generous rather than overly precise.
Ingredient notes
- Choose firm vegetables: Firm aubergine, courgette and tomato hold their shape better during slicing and baking.
- Use ripe but not soft tomatoes: Ripe tomatoes bring sweetness and acidity, but overly soft ones can release too much liquid and make the tian watery.
- Fresh thyme works best: Fresh thyme gives a cleaner herbal note between the vegetable layers; dried thyme can taste more concentrated and should be used carefully.
Texture tips
- Control excess moisture: If the tomatoes are especially juicy, drain the slices briefly before layering so the vegetables bake rather than steam.
- Add breadcrumbs near the end: Scattering the breadcrumbs on only for the final bake keeps them golden and crisp instead of absorbing too much vegetable juice.
- Slice evenly: Vegetables of similar thickness soften at the same pace, giving a tender tian without some pieces collapsing before others cook through.
Serving ideas
- Serve with simple mains: Pair with roast chicken, grilled fish, lentils or crusty bread for an easy Mediterranean-style meal.
- Finish with herbs: A few fresh basil leaves or extra thyme after baking brighten the savoury, olive oil-rich vegetables.

Ingredients
Instructions
- Heat the oven to 190°C (375°F). Drizzle 1 tbsp of the olive oil over the base of a baking dish, then rub it around with 1 peeled garlic clove to lightly perfume the dish.
- Slice the aubergine, courgettes and tomatoes into thin, even rounds, about 3 to 5 mm thick. Thinly slice the remaining garlic clove.
- Arrange the vegetables upright in the dish, alternating aubergine, courgette and tomato, packing them snugly. Tuck the sliced garlic and thyme sprigs between the layers, then drizzle over the remaining 2 tbsp olive oil and season with the black pepper.
- Bake for 50 minutes, until the vegetables are tender when pierced and the edges are lightly caramelised. If the top is browning too quickly, loosely cover the dish with foil for the last 15 minutes.
- Scatter the breadcrumbs evenly over the top and return to the oven for 5 to 8 minutes, until golden. Rest for 5 minutes before serving so the layers settle.
Recipe notes
Tips
- For neat layers, slice the vegetables to a similar diameter and thickness so they cook evenly.
- If the tomatoes are very juicy, let the sliced rounds sit on a plate for 5 minutes, then tip away any excess liquid before layering.
Substitutions
- Replace Fresh thyme with Fresh basil for a softer, sweeter herb note.
- Replace Breadcrumbs with Panko breadcrumbs for a crunchier topping.
Storage
- Refrigerate up to 3 days
- Cool completely, then cover and refrigerate. Reheat in a 180°C (355°F) oven for 15 to 20 minutes until piping hot; the breadcrumb topping will soften, so add a fresh sprinkle of breadcrumbs and briefly bake to re-crisp if you like.
