Vegetarian Tian Provençal (Baked Layered Vegetables)
Why this recipe works
- Savoury base: Softened onion and garlic sit beneath the vegetables, seasoning the dish from the bottom as it bakes.
- Layered roasting: Arranging the vegetables upright in tight rows helps them soften evenly while the exposed edges caramelise.
- Simple ingredients: Olive oil, thyme, salt and pepper keep the focus on the natural sweetness and texture of the vegetables.

Authenticity notes
- Provençal style: This style of tian reflects southern French cooking: seasonal vegetables, olive oil, herbs and slow oven roasting.
- The meaning of tian: The word can refer to both the shallow baking dish and the layered vegetable preparation cooked inside it.
- Common variations: Other versions may include peppers, potatoes or different herbs, but aubergine, courgette and tomato are a classic summer combination.
Ingredient notes
- Choose firm tomatoes: Ripe but firm tomatoes slice cleanly and hold their shape better during the long bake.
- Keep slices even: Similar thickness helps the vegetables cook at the same pace and gives the finished tian a neater structure.
- Use fresh thyme if possible: Fresh thyme gives a cleaner herbal flavour and stands up well to roasting with olive oil.
Texture tips
- Help aubergine soften: If the aubergine is much larger than the other vegetables, slice it a little thinner so it becomes fully tender.
- Avoid excess moisture: Pack the slices upright rather than laying them flat, so the vegetables roast instead of stewing in their juices.
- Encourage caramelised edges: Let the dish finish uncovered once the vegetables have softened, watching that the top does not brown too quickly.
Timing notes
- Mostly hands-off: The slicing and arranging take the most attention; the oven does the main work once the dish is assembled.
- Best served warm: A short rest after baking lets the juices settle and makes the layers easier to serve neatly.
- Best texture on the day: Leftovers reheat well, but the vegetables will soften further after refrigeration.

Ingredients
Instructions
- Heat the oven to 190°C (375°F). Thinly slice the onion and garlic. Slice the aubergine, courgette and tomatoes into even rounds, about 5 mm thick.
- Warm 2 tbsp of the olive oil in a frying pan over a medium heat. Add the onion with a pinch of the fine sea salt and cook for 10 to 12 minutes, stirring, until soft and lightly golden. Stir in the garlic for 1 minute until fragrant.
- Spread the onion and garlic over the base of a shallow baking dish. Arrange the aubergine, courgette and tomato slices upright in tight rows, alternating the vegetables as you go. Tuck in 4 sprigs of the fresh thyme, then season with the remaining fine sea salt and black pepper.
- Drizzle over the remaining 2 tbsp olive oil. Bake for 50 to 55 minutes until the vegetables are tender and the edges are caramelised, covering loosely for the first 30 minutes if the top is browning too quickly. Rest for 5 minutes, then scatter over the leaves from the remaining thyme sprigs before serving.

Tips
- For neater layers, keep the slices a consistent thickness so everything cooks at the same rate.
- If the aubergine is very large, slice it slightly thinner than the courgette so it softens fully in the baking time.
- This is best served warm rather than piping hot, as the flavours settle and the layers hold together more cleanly.
Substitutions
- Replace Fresh thyme with Fresh rosemary for a more robust, piney flavour.
- Replace Olive oil with Virgin olive oil for a fruitier finish.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat in a 180°C (355°F) oven for 15 to 20 minutes until piping hot, or warm gently in a microwave; the vegetables will soften further on reheating.
