Sausage and Peppers

Sausage and peppers is a generous American-Italian style pan dish, usually made by browning sausages before simmering them with sweet peppers, onions and a simple tomato sauce. The flavour comes from proper caramelisation in the pan: the browned sausage juices, softened vegetables, garlic and oregano give the sauce a savoury depth without making it heavy. Pork sausages stay juicy as they finish cooking gently among the peppers, while fresh basil added at the end keeps the dish bright. Serve it straight from the pan with bread, pasta, rice or potatoes for a practical dinner that feels hearty but uncomplicated.

Why this recipe works

  • Built-in sauce depth: Browning the sausages first leaves savoury fond in the pan, which lifts the tomato sauce once the vegetables and tomatoes are added.
  • One-pan efficiency: The vegetables soften, the sauce reduces and the sausages finish cooking in the same pan, keeping the workflow simple and flavour concentrated.
  • Hearty but balanced: Sweet peppers and onions balance the richness of the pork sausages, while tomatoes and basil keep the dish fresh rather than heavy.

Ingredient notes

  • Choose well-seasoned sausages: Pork sausages with good seasoning and enough fat give the dish its savoury base; very lean sausages can cook up drier.
  • Use both red and green peppers: Red peppers bring sweetness, while green peppers add a slightly sharper, more vegetal note that keeps the sauce balanced.
  • Tinned tomatoes matter: Good chopped tomatoes help create a brighter, cleaner sauce without needing a long simmer.

Common mistakes

  • Rushing the browning: Give the sausages enough time to colour properly before removing them from the pan; this step adds much of the final flavour.
  • Simmering too hard: Once the tomatoes are added, keep the heat gentle so the sausages cook evenly and the sauce reduces without becoming dry.
  • Letting the sauce over-reduce: If the pan looks too dry before the sausages are cooked through, lower the heat and loosen the sauce with a splash of water.

Make-ahead tips

  • Good for leftovers: Cool completely, then refrigerate in a sealed container for up to 3 days.
  • Freezes well: Freeze the cooked sausage and peppers for up to 2 months, then defrost overnight in the fridge before reheating.
  • Reheat gently: Warm in a covered pan over low heat with a splash of water until piping hot, so the sauce loosens without drying out.

Serving ideas

  • With bread: Serve with crusty bread to mop up the tomato-pepper sauce.
  • With pasta or polenta: Spoon the sausages and peppers over pasta, creamy polenta or soft rolls for a more substantial meal.
  • Fresh finish: Add torn basil just before serving to keep its flavour bright and aromatic.

  1. Heat the olive oil in a large frying pan over medium-high heat. Add the sausages and brown well all over, turning regularly, for 8–10 minutes. Transfer to a plate; they do not need to be cooked through yet.
  2. Meanwhile, slice the onion and peppers into strips, and finely chop the garlic. Reduce the heat to medium and add the onion and peppers to the pan with the salt and black pepper. Cook, stirring, for 8–10 minutes until softened and starting to take on colour.
  3. Stir in the garlic and dried oregano and cook for 1 minute until fragrant. Tip in the chopped tomatoes, scraping up any browned bits from the base of the pan. Bring to a gentle simmer.
  4. Return the sausages (and any juices) to the pan and nestle them into the sauce. Cover loosely and simmer gently for 15–18 minutes, turning the sausages once or twice, until the sauce has thickened slightly and the sausages are cooked through. If the sauce reduces too quickly, lower the heat.
  5. Take the pan off the heat and tear in most of the basil, stirring it through. Taste and adjust seasoning with a little more salt and pepper if needed. Serve hot with the remaining basil scattered over.

Recipe notes

Tips

  • For the best flavour, let the sausages brown properly before adding the vegetables; the browned bits on the pan enrich the tomato sauce.
  • Keep the simmer gentle once the tomatoes go in so the sauce stays light and the sausages cook evenly without splitting.

Substitutions

  • Replace fresh basil with fresh parsley for a different herb finish.
  • Replace dried oregano with Italian seasoning for a slightly rounder herb profile.
