Psari Plaki (Baked Fish with Tomato and Potatoes)

Psari plaki brings together the familiar Greek flavours of olive oil, tomato, garlic, oregano and lemon in a simple oven-baked fish dish. The method lets the potatoes and onions soften first, so they absorb the garlicky tomato sauce and become tender beneath the fillets. Mild white fish works well here because it cooks quickly and stays moist on top of the saucy vegetables. Finished with parsley, lemon zest and juice, it is a bright, savoury dinner with enough substance to serve on its own, yet still feels light and fresh.

Why this recipe works

  • Built-in depth: The tomato sauce is briefly simmered with garlic, oregano and olive oil before baking, giving the vegetables and fish a fuller flavour.
  • Efficient oven cooking: The potatoes start in the baking dish first, then the fish is added only when they are nearly tender, so both finish properly.
  • Fresh finish: Lemon juice and zest sharpen the rich olive oil and tomato base without overpowering the delicate white fish.

Ingredient notes

  • Choose firm white fish: Use a mild, firm white fish fillet that will hold its shape in the sauce, such as cod, haddock, hake or a similar option.
  • Let the olive oil count: Extra virgin olive oil is central to the sauce, so a good, fruity oil gives the dish a rounder Greek-style flavour.
  • Add lemon at the end: Finishing with lemon after baking keeps the flavour bright and prevents the fish from tasting flat.

Timing notes

  • Bake the potatoes first: The potatoes need a head start before the fish goes in; otherwise the fish may be done while the potatoes are still firm.
  • Serve shortly after resting: A brief rest helps the juices settle, but the fish is best served while it is still just-cooked and tender.

Common mistakes

  • Adding the fish too soon: Wait until the potatoes have started to soften before adding the fish, so the fillets do not overcook while the vegetables finish.
  • Leaving the fish in too long: Start checking as soon as the fillets turn opaque; they should flake easily but still look moist.
  • Using a watery sauce: Simmer the tomato sauce until slightly thickened before baking so it coats the potatoes rather than flooding the dish.

Make-ahead tips

  • Make the sauce ahead: The tomato sauce can be cooked in advance and refrigerated, then spooned over the potatoes before the fish is added.
  • Best freshly baked: The finished dish is at its best the day it is made, as white fish can dry out when repeatedly reheated.
  • Reheat gently: Reheat leftovers in a 180°C (355°F) oven until piping hot, then refresh with a little lemon before serving.

  1. Heat the oven to 200°C (390°F). Slice the new potatoes into 5 mm rounds, slice the onion, and thinly slice 2 garlic cloves; keep the remaining garlic for the sauce.
  2. Toss the potatoes and onion in a baking dish with 2 tbsp of the extra virgin olive oil, 1 tsp of the fine sea salt, and 0.5 tsp of the black pepper. Spread into an even layer and bake for 20 minutes, until the potatoes are starting to soften at the edges.
  3. Meanwhile, warm 2 tbsp of the extra virgin olive oil in a saucepan over medium heat. Add the remaining garlic and cook for 30 to 60 seconds until fragrant, then stir in the canned chopped tomatoes, dried oregano, 0.5 tsp fine sea salt, and 0.5 tsp black pepper; simmer for 8 to 10 minutes until slightly thickened.
  4. Take the dish from the oven and spoon the tomato sauce over the potatoes and onion. Nestle the white fish fillets on top, drizzle over the remaining extra virgin olive oil, and season lightly with a pinch more salt and pepper if needed.
  5. Return to the oven and bake for 12 to 15 minutes, until the fish is opaque and flakes easily and the potatoes are tender. If your fillets are thick, allow a few extra minutes and check the centre.
  6. Finely chop the fresh parsley. Zest the lemon, then cut it in half and squeeze the juice over the fish and vegetables; scatter over the parsley and lemon zest, and rest for 2 minutes before serving.

Recipe notes

Tips

  • Slice the potatoes evenly so they soften at the same rate; if they are still firm after the first bake, give them 5 more minutes before adding the fish.
  • For the juiciest result, spoon a little of the tomato sauce over the fish halfway through baking.
  • Fish cooks quickly, so start checking at 12 minutes; it is ready when it flakes easily and looks opaque all the way through.

Substitutions

  • Replace Fresh parsley with Fresh dill for a more aniseed, taverna-style finish.
  • Replace Dried oregano with Fresh oregano for a softer herbal note; use more and add it at the end with the parsley.
  • Replace New potatoes with Yukon gold potato for a slightly creamier texture.

Storage

  • Refrigerate up to 2 days
  • Cool, then refrigerate in a sealed container. Reheat in a 180°C (355°F) oven until piping hot; add a squeeze of lemon after reheating to freshen the flavours.
