Grilled Sea Bass with Chermoula and Roasted Peppers

Grilled sea bass is a light, fast-cooking fish dish where the quality of the fillet is kept centre stage: crisped skin, just-opaque flesh and a fresh sauce added at the end rather than cooked into it. Here, chermoula brings the defining character — a loose herb, garlic, cumin and paprika dressing with lemon for brightness. Roasted red peppers add sweetness and softness alongside the fish, making the plate feel complete without heavy sides. It is well suited to a quick dinner, especially with flatbread, couscous or a simple green salad.

Why this recipe works

  • Fresh, layered sauce: Chermoula combines soft herbs, garlic, cumin, paprika and lemon for a sauce that is bright, savoury and aromatic.
  • Soft peppers, flaky fish: Roasted peppers bring sweetness and tenderness, balancing the clean, delicate texture of grilled sea bass.
  • Efficient timing: The chermoula is made while the peppers roast, keeping the recipe streamlined without sacrificing flavour.

Timing notes

  • Serve as soon as the fish is ready: Sea bass is at its best just after grilling, when it is opaque, moist and flakes easily.
  • Steam the peppers briefly: Covering the roasted peppers for a few minutes helps loosen the skins and makes them easier to peel.

Adjust the heat

  • For gentler heat: Use smoked paprika instead of hot paprika for a softer, smokier chermoula.
  • For more warmth: Add extra hot paprika gradually, keeping enough lemon and herbs to maintain the sauce’s freshness.

Ingredient notes

  • Use fresh herbs: Fresh coriander and parsley are central to chermoula’s loose, vibrant texture; dried herbs will not give the same lift.
  • Choose skin-on fillets: Skin-on sea bass is easier to handle on the grill and helps protect the delicate flesh from drying out.

Texture tips

  • Do not overcook the fish: Remove the sea bass from the heat as soon as it flakes, as the residual heat will continue cooking it briefly.
  • Add the chermoula at the end: Spoon the sauce over after grilling so the herbs stay fresh and the fish remains clean-tasting rather than oily.

  1. Heat the oven to 220°C (430°F). Put the red peppers on a baking tray, drizzle with 1 tbsp olive oil and roast for 20 to 25 minutes, turning once, until blistered and soft.
  2. Meanwhile, finely chop the fresh coriander and fresh parsley, then crush the garlic. Stir them together with the ground cumin, hot paprika, 3 tbsp olive oil, a pinch of fine sea salt, a pinch of black pepper, and the zest and juice of half the lemon to make a loose chermoula.
  3. When the peppers are ready, transfer them to a bowl and cover for 5 minutes to loosen the skins. Peel off the skins, remove the seeds, then tear the flesh into strips and dress with 1 tbsp olive oil, the juice of the remaining half lemon, and a pinch each of fine sea salt and black pepper.
  4. Preheat the grill to high. Rub the sea bass with the remaining 1 tbsp olive oil and season with the remaining fine sea salt and black pepper, then grill skin-side up for 2 to 3 minutes and turn carefully.
  5. Grill for a further 2 to 4 minutes, until the fish is just opaque and flakes easily. Serve the sea bass with the roasted peppers and spoon the chermoula over the top, with any extra herbs scattered over.

Recipe notes

Tips

  • For the best texture, take the sea bass off the heat as soon as it flakes; it will carry on cooking slightly as it rests.
  • If you are serving anyone who is pregnant, elderly, or immunocompromised, make sure the fish is cooked until fully opaque and piping hot throughout.

Substitutions

  • Replace hot paprika with smoked paprika for a gentler heat and a smokier chermoula.
  • Replace lemon with lime for a sharper, more aromatic citrus note.

Storage

  • Refrigerate up to 2 days
  • Cool leftovers quickly, then refrigerate in an airtight container. Reheat the fish gently in a 180°C (355°F) oven until piping hot, and spoon the chermoula on after reheating for the freshest flavour.
