Chicken Muhammar with Saffron Rice
Why this recipe works
- Layered flavour: Browning the chicken first builds savoury depth, while cumin, cinnamon, tomatoes and pomegranate molasses create a warm, tangy sauce.
- Sweet-tangy balance: Pomegranate molasses gives the sauce brightness and gentle sweetness, cutting through the richness of the chicken thighs.
- Contrasting textures: Fluffy saffron rice and toasted almonds balance the tender braised chicken and glossy sauce.

Timing notes
- Serve once the sauce is glossy: The final uncovered simmer is important: it reduces the sauce so it clings to the chicken rather than pooling thinly around the rice.
- Use the braising time well: Prepare the saffron rice and toast the almonds while the chicken simmers, so everything is ready at the same time.
Texture tips
- Keep the chicken succulent: Bone-in, skin-on thighs are well suited to braising because they stay moist during the covered simmer.
- For separate rice grains: Rinse the basmati thoroughly and let it steam off the heat, still covered, before folding through the saffron water.
Ingredient notes
- Use good pomegranate molasses: The sauce relies on pomegranate molasses for its sweet-sour depth, so choose one with a pronounced tang rather than a flat, overly sugary finish.
- Bloom the saffron: Crushing the saffron and steeping it in hot water helps release its colour and aroma before it is folded through the rice.
Make-ahead tips
- Make the chicken ahead: The chicken and sauce can be cooked in advance, cooled quickly and reheated gently with a splash of water until piping hot.
- Store rice separately: Keep the saffron rice apart from the sauce for the best texture, then reheat it covered with a little water until steaming.
- Freeze the braise, not the rice: The chicken and sauce freeze well; defrost overnight in the fridge before reheating gently.

Ingredients
Chicken muhammar
Saffron rice and almonds
Instructions
- Put the kettle on. Peel and finely slice the onion, then peel and crush the garlic. Pat the chicken dry and season all over with the salt and pepper.
- Heat the olive oil in a dutch oven over medium-high heat. Brown the chicken, skin-side down first, for 4 to 5 minutes per side until deeply golden, then transfer to a plate.
- Lower the heat to medium and add the onion to the pot. Cook for 8 to 10 minutes, stirring, until softened and lightly golden. Stir in the garlic, cumin and cinnamon and cook for 1 minute until fragrant.
- Tip in the tomatoes and stir, scraping up any browned bits. Stir in the pomegranate molasses, then return the chicken to the pot along with any resting juices. Bring to a gentle simmer, cover, and cook for 35 to 40 minutes until the chicken is tender and cooked through.
- Meanwhile, rinse the basmati rice in several changes of cold water until the water runs mostly clear. Put the rice in a saucepan with 600 ml just-boiled water and bring to the boil, then cover and cook on the lowest heat for 10 minutes. Turn off the heat and leave, covered, for 10 minutes to steam.
- Crush the saffron threads in a small bowl, then stir in 2 tbsp hot water from the kettle and leave for 5 minutes. Fluff the rice with a fork and drizzle over the saffron water, folding gently to marble it through.
- Toast the almonds in a dry frying pan over medium heat for 3 to 5 minutes, shaking often, until lightly golden and fragrant. Uncover the chicken and simmer for 5 to 10 minutes until the sauce is glossy and lightly thickened, turning the chicken to coat.
- Spoon the saffron rice onto plates and top with the chicken and plenty of sauce. Scatter over the toasted almonds and serve straight away.
Recipe notes
Tips
- For the glossiest finish, simmer the sauce uncovered at the end and turn the chicken occasionally so it gets lacquered.
- Rinsing the basmati rice well helps it cook up fluffy and separate rather than sticky.
- If serving vulnerable groups, make sure the chicken is cooked until piping hot throughout with no pink at the bone.
Substitutions
- Replace Chicken thighs with Chicken breast cutlets, reducing the covered simmering time to 18 to 22 minutes so the chicken stays juicy.
- Replace Almonds with Pistachios for a more floral, buttery crunch.
Storage
- Refrigerate up to 3 days
- Cool the chicken and sauce quickly, then refrigerate in a sealed container. Reheat gently in a saucepan with a splash of water until piping hot; reheat rice separately in the microwave with a spoonful of water, covered, until steaming. Freeze the chicken and sauce for up to 2 months; defrost overnight in the fridge before reheating.
