Jerk Chicken with Rice and Peas (Festive Caribbean Table)

At the centre of this Caribbean-style dinner is jerk chicken: richly seasoned, chilli-hot and aromatic with allspice, thyme, garlic, ginger and lime. The marinade coats bone-in chicken thighs so the skin roasts glossy while the meat stays juicy, giving the dish its recognisable heat, savoury depth and slightly sweet edge. Rice and peas make the natural partner, with long-grain rice simmered in coconut milk alongside kidney beans until fluffy and fragrant. Together, the spicy roast chicken and creamy rice create a generous, practical meal suited to a festive table or a relaxed weekend dinner.

Why this recipe works

  • Deeply seasoned marinade: Blending spring onion, garlic, thyme, allspice, ginger, lime and habanero creates a paste that clings well to the chicken and seasons it thoroughly.
  • Heat with balance: Habanero brings chilli intensity, while brown sugar, soy and lime round it out with sweetness, salt and acidity.
  • Built-in side dish: Coconut rice and peas soften the spice of the jerk chicken and make the meal feel complete without needing extra accompaniments.

Adjust the heat

  • For gentler heat: Remove the habanero seeds before blending, or use less chilli while keeping the thyme, allspice and lime for the jerk-style flavour.
  • For more fire: Use the whole habanero, including the seeds, and let the chicken marinate longer so the heat carries through the meat.
  • Keep the heat rounded: Serve with the coconut rice and peas, which help mellow the chilli without dulling the spice.

Timing notes

  • Marinate if you can: One hour gives the chicken clear flavour, but an overnight rest develops a deeper, more rounded seasoning.
  • Take the chill off: Bringing the marinated chicken out of the fridge briefly before roasting helps it cook more evenly.
  • Rest before serving: A short rest after roasting helps the juices settle before the chicken is served with the rice.

Authenticity notes

  • Jerk-style seasoning: Jerk is strongly associated with Jamaica and is known for its allspice, thyme and chilli-led seasoning.
  • Oven-friendly method: Traditional jerk is often cooked over fire or smoke; this version uses the oven for a practical home-cooking approach.
  • Rice and peas pairing: Coconut rice with beans is a familiar Caribbean-style partner for highly seasoned meats, adding softness and richness to the plate.

Common mistakes

  • Do not crowd the chicken: Leaving space between the thighs helps the skin roast rather than steam.
  • Watch the marinade: The sugar and soy in the paste can darken quickly; cover loosely with foil if the surface starts to catch before the chicken is cooked.
  • Keep the rice covered: Letting the rice stand off the heat with the lid on allows the grains to finish steaming and become fluffier.

  1. Trim and roughly chop the spring onions, peel the garlic, and remove the stalk from the habanero. Strip the thyme leaves from the sprigs (you will use the leaves for the marinade).
  2. In a blender, combine the spring onion, garlic, habanero, thyme leaves, allspice, ground ginger, brown sugar, dark soy sauce, the zest and juice of the lime, olive oil, fine sea salt, and black pepper. Blend to a thick paste, scraping down as needed.
  3. Put the chicken thighs in a bowl and rub the jerk paste all over, getting some under the skin where you can. Cover and marinate in the fridge for at least 1 hour, or up to overnight for deeper flavour.
  4. Heat the oven to 200°C (390°F). Arrange the chicken thighs skin-side up in a roasting pan, leaving a little space between pieces.
  5. Roast for 40 to 50 minutes, basting once or twice with the pan juices, until the skin is lacquered and the chicken is cooked through. If the paste starts to catch, loosely cover with foil for the last 10 minutes.
  6. While the chicken roasts, rinse the long-grain white rice in a colander until the water runs mostly clear. Tip into a saucepan with the coconut milk, water, fine sea salt, and red kidney beans, then bring to a gentle boil.
  7. Cover, turn the heat to low, and simmer for 15 minutes. Take off the heat and leave covered for 10 minutes, then fluff with a fork.
  8. Rest the chicken for 10 minutes before serving. Spoon the rice and peas alongside and drizzle a little of the roasting juices over the chicken if you like.

Recipe notes

Tips

  • For a more even roast, bring the marinated chicken out of the fridge 20 minutes before it goes into the oven.
  • If you are sensitive to heat, remove the seeds from the habanero before blending; the flavour stays bright but the burn is gentler.
  • Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, make sure the chicken is cooked until piping hot all the way through.

Substitutions

  • Replace Chicken thighs with Chicken drumsticks for a similarly juicy roast; roast until cooked through and lacquered.
  • Replace Dark soy sauce with Light soy sauce for a less intense colour and a slightly saltier finish.

Storage

  • Refrigerate up to 3 days
  • Cool leftovers quickly, then refrigerate in sealed containers. Reheat chicken and rice in a 180°C (355°F) oven, covered, for 15 to 20 minutes until piping hot; add a splash of water to the rice to loosen.
