Air Fryer Thai Chicken Satay Skewers
Why this recipe works
- Aromatic marinade: Coconut milk helps carry the curry powder, coriander, garlic and soy into the chicken for a savoury, gently spiced base.
- Richness with lift: Lime juice cuts through the peanut butter and soy sauce, keeping the dipping sauce glossy, tangy and balanced.
- Fast cooking: Thin strips of chicken cook quickly in the air fryer, giving lightly charred edges without the set-up of outdoor grilling.

Timing notes
- Short marinating time: The thin chicken strips only need a brief chill for the coconut curry marinade to coat and season them well.
- Best served hot: Satay skewers are at their juiciest straight from the air fryer, with the peanut sauce served alongside for dipping.
Common mistakes
- Avoid overcrowding: Leave space between skewers so air can circulate; a cramped basket will steam the chicken instead of lightly charring it.
- Watch leaner cuts: Chicken breast cooks faster than thighs, so check it early to avoid a dry result.
- Protect wooden skewers: Soaking wooden skewers helps reduce scorching on the exposed ends during air frying.
Ingredient notes
- Use thighs for juiciness: Boneless, skinless chicken thighs stay tender in the air fryer and suit the short, high-heat cooking time.
- Mild curry aroma: Yellow curry powder brings warmth and colour rather than strong heat, making the skewers family-friendly.
- Adjust the sauce with lime: A little extra lime juice loosens a thick peanut sauce while adding brightness.
Make-ahead tips
- Prepare components early: The chicken can be cut and marinated ahead of cooking, and the peanut sauce can be whisked together in advance.
- Store sauce separately: Keep cooked skewers and peanut sauce in separate sealed containers so the chicken reheats cleanly and the sauce stays smooth.
- Reheat gently: Reheat the skewers in the air fryer at 180°C (355°F) until piping hot, then stir the sauce and loosen with lime if needed.

Instructions
- Crush the garlic to a paste. In a mixing bowl, whisk together the coconut milk, curry powder, ground coriander and soy sauce.
- Cut the chicken into long strips and coat well in the marinade. Cover and refrigerate for 20 minutes.
- Thread the chicken on skewers, leaving a little space between pieces for airflow. Heat the air fryer to 200°C (390°F).
- Air fry the skewers for 10 to 12 minutes, turning halfway, until lightly charred at the edges and cooked through. If your air fryer is small, cook in batches to avoid overcrowding.
- Meanwhile, make the sauce: whisk the smooth peanut butter with the soy sauce, brown sugar, and the lime juice until glossy. If it seems very thick, whisk in a little more lime juice until it is dippable.
- Slice the cucumber and serve alongside the hot satay skewers with the peanut sauce for dipping. Finish with a final squeeze of lime if you like.
Recipe notes
Tips
- For maximum juiciness, cut the chicken into even strips so it cooks at the same rate and does not dry out.
- If using wooden skewers, soak them in water for 20 minutes so the exposed ends are less likely to scorch in the air fryer.
Substitutions
- Replace Chicken thighs with Chicken breast cutlets for a leaner skewer; reduce air frying time by 1 to 2 minutes and check they are cooked through.
- Replace Smooth peanut butter with Crunchy peanut butter for extra texture in the sauce.
Storage
- Refrigerate up to 3 days
- Refrigerate cooked skewers and peanut sauce separately in sealed containers. Reheat skewers in the air fryer at 180°C (355°F) for 3 to 5 minutes until piping hot; stir the sauce well and loosen with a squeeze of lime if needed.
