Southern BBQ Pulled Pork
Why this recipe works
- Low, slow cooking: Pork shoulder has enough fat and connective tissue to become tender and easy to shred after several hours of covered cooking.
- Tangy balance: Apple cider vinegar, mustard and Worcestershire sauce cut through the richness of the pork and keep the sauce lively.
- Built-in barbecue flavour: Smoked paprika, brown sugar, garlic, onion and cayenne give the pork a smoky, lightly sweet backbone before the sauce is added.
- Good for planning ahead: The pork can be rubbed in advance, and leftovers reheat well with a little added moisture to keep them juicy.

Timing notes
- For deeper flavour: Rub the pork with the spice mix and chill it for up to 24 hours before cooking if you want the seasoning to penetrate more fully.
- Rest before shredding: Let the pork rest after roasting so the juices settle before it is pulled apart and returned to the sauce.
- Holding for a crowd: Keep the sauced pork covered in a 120°C (250°F) oven and loosen with a little vinegar or water if it starts to look dry.
Ingredient notes
- Choose the right cut: Boneless pork shoulder is ideal because it stays moist during long cooking and pulls apart easily once tender.
- Adjust the tang: Add a little more apple cider vinegar at the end if the sauce tastes too sweet or heavy.
- Mustard swaps: Dijon mustard gives a smoother, sharper sauce than yellow mustard, so use it when you want a more pronounced savoury edge.
Make-ahead tips
- Season ahead: Apply the dry rub the day before cooking, then keep the pork covered in the fridge until ready to roast.
- Reheat gently: Warm leftovers with a splash of water until piping hot, either in a saucepan or covered in a 180°C (355°F) oven.
- Freezer-friendly: Cool the cooked pork quickly, freeze in a sealed container, then defrost overnight in the fridge before reheating.
Common mistakes
- Letting the pot dry out: Check the Dutch oven during cooking and add a small splash of water if the base looks dry to prevent scorching.
- Stopping too soon: The pork is ready when a fork twists easily in the meat; if it resists shredding, it needs more time.
- Cooling too slowly: Cool leftovers promptly before refrigerating so the pork stays safe and reheats cleanly.

Ingredients
Instructions
- Heat the oven to 150°C (300°F). In a small bowl, mix the smoked paprika, light brown sugar, ground garlic, ground onion, fine sea salt, black pepper and cayenne pepper.
- Pat the pork shoulder dry, then rub it all over with the spice mixture, pressing it in well. Put the pork into a dutch oven with the lid on.
- Roast for 5 hours, turning the pork once halfway through, until very tender and a fork twists easily. If the pot looks dry at any point, add a small splash of water to prevent scorching.
- Lift the pork onto a board and rest for 20 minutes. Skim excess fat from the cooking juices in the pot, leaving the flavourful juices behind.
- Stir the ketchup, yellow mustard, apple cider vinegar and Worcestershire sauce into the juices in the pot. Warm over low heat for 3 to 5 minutes, stirring, until glossy and well combined.
- Shred the pork, discarding any large pieces of fat, then return it to the pot. Toss with the sauce and warm for 10 minutes, stirring once or twice, until piping hot.
- Taste and adjust with a little more apple cider vinegar for extra tang, if you like. Serve hot, spooning a little extra sauce over the top.
